Happy Monday. Today is appointment and errand day. So, last night's leftovers never happened. Instead, I made Tuscan bean stew. It is full of veggies, cannellini beans and healthy stuff. Surprisingly, everyone loves it. Tonight will be leftovers or takeout.
What's on your menu?

Tonight is a one pan pasta dish-bow tie pasta, chicken, green peppers and onions that have been sauteed, mushrooms, chicken broth and a bit of sour cream. Tasty stuff, good for a cold night. (And while it isn't North cold, it was 34 when I got up this morning. I have a friend a bit west of me that had frost on her car. It is cold in Florida. Cold cold cold. Like hot chocolate and blankets cold and long johns and fleece. And socks. Two pairs for me. )

Ground beef tacos, one pot Mexican rice, refried beans and avocado tomato salad (to use as topping for the tacos). Our Monday night dinner is canceled since my in loves are out town, but we're still getting together with our friend and her family. So only 8 of us for dinner! Not sure what dessert will be. Maybe ice cream

OMG! Dd#1 was literally in tears yesterday saying to me "You never feed me!!!" I told her that I can't live on a diet of take-out pizza and mashed potatoes Anyway, I'll try to cook something tonight that she likes It looks like it will be frozen lasagna ... I'm fine with that because it's easy

We're having cordon bleu sliders, maple roasted sweet potatoes, cut fresh vegetables, raspberry jello, and chocolate pudding, with Cool Whip, for dessert. Yes, I do realize that there are lots of chemicals in that meal. That's why I'm roasting sweet potatoes and not making funeral potatoes. Judge all you want, but don't waste your time calling CPS. Everyone I am feeding is an adult, and is welcome to make themselves an alternate, less chemically laden meal if they so please.

last week I had a turkey burger while I was out that was really delicious-so I am trying to copy it
it will be homemade turkey burgers with a granny smith apple slaw and a sliver of cranberry sauce. Probably roasted carrots and/or cauliflower to go with

Return chicken to pan, toss in some cooked bowties and parsley. Then I'll throw on the cheese to taste.

Chili and toast. DD had a hockey game yesterday right at dinner time so I made a big pot for dinner. DS has football and DD has hockey practice tonight so leftovers it is.

I was going to make some kind of casserole, but then had an attack of lazy and decided on creamy chicken enchiladas, Mexican rice, and refried beans that I can pull out of the freezer instead. Peaches from the freezer sounds good for dessert too. Bada bing, bada boom, dinner is served!

I'm having Citrus Bison Meatballs and Coconut Crusted Onion Rings with a side salad of romaine, no dressing. Both are new recipes. Even though I fell off the Whole 30 wagon at day 18, I'm still working through my meal plan and will continue to intersperse Whole 30 compliant meals with regular meals. I needed to get back in the habit of cooking instead of eating out all the time, and if I'm going to cook, it might as well be as healthy as I can make it. The Whole 30 thing ended at my birthday party. My family is so large, we have one birthday party per month. January is also my niece and nephew, otherwise I wouldn't have done anything special. Anyway, my mom was so proud of the cake she had made for me. It was low fat everything, sweetened with Sprite Zero which is of course loaded with fake sugar. In other words, everything I don't eat and absolutely nothing that was Whole 30 compliant. But really, my mom made me a cake, and she put effort into making it "diet" for me, what was I supposed to do? And then it was downhill from there because I have no self control. So now I'm back to just cutting out sweet and not eating between meals, which is what I should have been doing all along.

leannec, don't worry, you have all of us peas to testify on your behalf, that yes, you *do offer her food nearly every night, but she is picky and will not eat it!!! As for us, I have lots of leftover BBQ ribs that disintegrated in the crock pot. That means sandwiches with some corn and a salad at our house. I am happy that I don't have much to do dinner-wise today. Lisa
