Last night I made the Chicken Fajita Pasta that was posted a few days ago. Forgive me, but I forget which pea posted it or I'd give her credit, because it was a hit. Tonight I'm planning to make a chicken stew with beans from America's Test Kitchen.

Oh, it's going to be a battle in this house tonight because dh and I will be eating leftover Pioneer Woman Chicken Tortilla Soup and the dd's won't eat it ... even though it is sooooo freaking good So I'll be a good mother and make something else for the dd's ... grilled cheese probably I could say that I would also serve my girls some veggies but that would be a lie because they wouldn't eat them with grilled cheese

We're having baked ziti - I'm trying out quinoa pasta for the first time. It smelled and looked delicious when I made it earlier. The girls have an unexpected soccer game tonight so they won't be eating until after 7pm. I'm making a side salad to go with it.

Today is our anniversary so no cooking for this lady! We are going out for a nice romantic dinner I can honestly say that I am one very lucky woman to be married to my dh. He's an amazing man!

I picked up a large package of chicken legs this morning from Aldi, for just 49 cents a pound So I am marinating said chicken legs, and will oven bake them tonight. I will serve them with mashed potatoes and peas.

Iam going to roast a whole chicken, that I had cut in half. I am just not sure if I am going to use half for shredded tacos/burritos or served with baked potatoes and green beans...
I will update once I decide.
Oh and DD has a medial patellar fracture. Ortho thinks its a previous injury, re injured. But she has never been diagnosed with one previously. S she goes next Friday for new xrays to compare from Sunday and then see how it will be treated.

I have a whole chicken thawing. It sounds boring just to roast it. But, by the time it's time to start dinner I will probably be too tired to get creative so I am sure we will have just roasted chicken and a couple of sides to be determined.
My husband thinks that I should make him some chocolate chip cookies! The problem with that is that two of the kids can't have chocolate. So I will have to make another batch of something they can have. Which equals= a lot of baking!!

You know, I don't know yet. Maybe a version of chicken spaghetti? Or alfredo? I just don't know yet. I suppose it will depend on whether or not the boy comes home tonight-he was unsure if he wanted to go to his dad's tonight or not. If it is just me, I will probably make chicken and rice. Or a black bean and rice soup. That sounds good too, doesn't it?? Or...shoot, I don't know. I am hungry RIGHT NOW and it is clouding my ability to decide.

I have carnitas in the crock pot. I started them a little late, so either I'll bump it up to high later this afternoon, or I'll eat dinner at 7:30. I have a recipe for pineapple guacamole to eat with it, and I have the rest of the day to come up with another side.

Could you make the regular dough and add chocolate to half and butterscotch chips to the other half?
I am making s low carb taco soup- it has ground turkey, onion, seasonings, rotel, and cream cheese in it. The pickiest child on earth will get a cheese quesadilla because no way would she touch that soup!

Tonight is grilled 95% burgers. I mix in a half packet of Hidden Valley ranch dip mix into the ground beef before forming the patties. Gives them so much flavor and adds an awesome char. 1sp per ounce. I'll make some sweet potato chips on the mandolin and roast on the oven with salt, pepper, and rosemary. I sweet potato worth is 5 sp. I've already made the broccoli slaw. Broccoli, shredded carrots, yellow raisins, sliced almonds. Then I make the usual slaw dressing with lite mayo, half the sugar, and 2% milk. 3sp per cup.

For the next few weeks Wednesday's are going to be crazy in our house. Baseball practice for oldest ds from 3:30 - 5:30 and basketball practice for youngest ds from 6 - 7, and the best part, we live close to 30 minutes away from the practice locations. it's going to be many nights of dropping one kid off, racing home to run the dogs and prep dinner, feed youngest ds, pick up oldest, take him home for food and to work on homework, then back to pick up youngest. Anyway, that being said, last night I was organized and made a tamale pie to have tonight, I figure it's easy to cut a slice and microwave. Then, because of all the talk yesterday about roast cabbage wedges, I've been craving them, so I think I'll make that for the side.

Just hamburgers tonight....In my defense I had planned to make oven baked salmon and quinoa salad, but our exchange student didn't like fish, so I had to come up with something else. Banana, strawberries and blueberries with custard and whipped cream for dessert.

Have a great day, everyone! That's what we're having too! I had to switch menus from what I posted earlier based on who will be eating here tonight. I add carrots to the chicken, beans, and potatoes, and I'll stick with the aforementioned applesauce and rolls, but switch dessert to chocolate cupcakes with peanut butter frosting. ETA: tiffanytwisted, here you go: Italian Chicken, Green Beans, and Potatoes. I only use 1/4 cup butter and I throw carrots in the pan too. Makes it colorful.
