Thank you once again for all of the well wishes for my ds. He's OK and his brain appears to be functioning as well as any teenager/young adult. Tonight I'm making the brown rice chicken and pepper dish that I was going to make last night. What's on your menu? Wishing you and your families a non-injurious and healthy day. ETA: Dinner has changed. I put chicken tortilla soup in the crockpot, because it's gonna get busy later and it's my ds's favorite. Yes, I do pamper my kids when they have boo-boos.

Sorry, I didn't know what happened to yuor son but glad he's ok I'm doing a kind of shepherd's pie tonight but with turkey mince (ground turkey) instead of lamb. Makes a change

I admit I'm stumped. I didn't do any meal planning on sunday and its just got me all thrown off. I had to run to Vons last night for something minor and I had no real list to shop off of. I hate shopping with no real purpose, waste of time. I picked up a few pantry items and some oranges and a bag of green beans, but other than that, no clue. Not meal planning for me just throws off my whole week. We don't have leftovers for lunch now, etc. Just a whole domino effect. Pfft. I'm going to try to do some planning this afternoon, Dahlia has a huge school project due on Friday and its consuming all our time in the evening so I need quick and easy. I'll be watching this thread for inspiration.

I like to take dinner leftovers for my work lunches, and when I plan meals, I think about what will be left over, how many lunches I need that week, etc. If I don't plan and I end up throwing something quick together last minute, it's usually something that doesn't produce leftovers and then I have nothing for lunch!
That said, I have my next two work lunches in the bag (so to speak), because I have leftovers from the soup I made for dinner last night. So, tonight's dinner is probably going to be homemade salmon patties on wheat buns for me and DS, and a chicken patty on a wheat bun for DH (who hates salmon). I have an acorn squash that I need to use, so I think I will make that, as well, and probably also a salad. I bought a ton of fresh salad veggies on Sunday and I need to use them!

Yet another day/night of finishing work then driving, what feels like, 57 bazillion times up and down the freeway to drop off/pick up kids plus a vet appointment thrown in to add to the excitement. Tonight we're having Skinnytaste's eggplant parmesan with pasta and sautéed kale. The eggplant is prepped and sat in the fridge, all I need to do is bake it.

I made vegetable beef soup with the leftover meatloaf instead of sandwiches last night, it was a cold snowy day here. Tonight will be leftover soup and whatever else needs to be used up in the fridge, it'll be a mish mash of things. Leftover smorgasboard!

Right? I am so not a sandwich lunch person, neither is DH. So yeah, leftovers for lunch are great! Save money/time etc. Plus, so much easier night before to put the leftovers in lunch containers and grab and go in the morning. I made the worst dinner last night, I tried freezing leftover Costco roast chicken, used the sealer machine and everything, but when the chicken thawed out it was all..crumbly! What the? I've never tried freezing the cooked chicken before like that, is that what happens to it after? Or maybe I did something wrong. IDK, but it was gross, all mealy textured. I tried to still fry it with teriyaki sauce and steamed some rice but yeah..that went in the trash. Blech. To the ladies trying the Mississippi roast, you are gonna loooove it!! One caveat, make sure you use the right sized roast! I think it's 4 or 5 pounds. Last time I made it, I forgot and used a much smaller roast, probably only like three pounds, and it came out waaaaaay too salty. Like, inedible salty. So watch for that. And McDonald might be it too, if my kid has her way. But then..what would I do about leftovers? ahhhh!!

Well, it will be another revolt in my house because I'm serving leftover beef stew with baking powder biscuits Dd#2 has riding lessons tonight ... Grandma takes her and will come here early so I need to feed them ... not sure what ... Grandma would love the stew so I could warm that up and just make macaroni and cheese for the dd's ... sigh!

I know, it sounds obvious. How about throw everything on a pizza base? Or make a creamy sauce, throw everything in (cook sausages beforehand if necessary) and serve over noodles? It's prosciutto cappelletti here and I realise I need to get off the computer and make a tomato sauce to go with it. Some sort of cream cake for dessert I think.

I wish I knew, Lucyg. I remember I bought the chicken and then we winded up eating something else that day so I pulled all the meat off the bones and froze a few packages of it. I did defrost in the microwave, I wonder if that's what did it?
I'm trying to remember if I made up a bag of all the teenier pieces, I know I tried freezing the breasts all intact, and that couldn't have been that bag. Total mystery meat, for sure!
And how do you guys tag someone's name? I can't understand how that works. I'm in 'quick reply'..does that make a difference?

Be aware that some people's user name isn't the same as their display name. If your tag doesn't work, click on the person's name on one of their posts and check the official user name on their page. When you use that, it will show up in your tag as the display name. ETA like for your name, I had to type @(no space)ohyvonne without the space in between oh and yvonne, because that's your user name. But it shows up on the page as oh yvonne, since that's your display name.
