I added parsnips to our dinner tonight and the kids were trying to guess what they are. DD(18) assumed it was apples, then guessed jicama and DS(17) guessed daikon. They poked at them a bit before trying and have decided they are like carrots and edible.
We never had parsnips growing up and I was curious enough to finally try them this week. So, do you eat parsnips?

Yes, we do. We like them a lot. We eat them roasted on their own or with other root vegetables. They're also really good in soups and purees.

Yes! I like to roast them with carrots. I didn't try them until I was an older teen, I have always liked most vegetables so it didn't take much convincing.

I hate the word parsnips. I hate it.
That root vegetable that you roast with squash in the oven with sea salt and olive oil? I love it. OMG I love it. I had some in a root vegetable salad with a vinegrette dressing for dinner a month or so ago. OMG it was good!!!
I just hate that word.

I love parsnips!! One of my all time favorite foods. My grandma used to make them straight from Grandpa's garden. Yummy!

Yes, but not very often. Like many people I generally have them with a proper 'roast' dinner, but those are far and few between for me these days. Therefore I don't think to use parsnips very often, but I do like them when I have them.

Always with roast vegetables. I also use them in stews, casseroles and slowcooker recipes.
Young parsnips can be quite sweet so they are nice then.

We eat them when we roast carrots, potatoes and the like. We don't get them a lot but I do pick them up when they are on sale.

They are nice mashed with carrot. It takes a wee bit of work to get the carrots lump-free so I often leave some lumps for added texture.
