Link to photo/recipeIt's sort of cook that they look like a disc or pancake shaped wedge, but other than that, why cook the cabbage like this rather than some other way? Kind of like the blue cheese iceberg lettuce 'wedge' trend-- I'm wondering if it tastes better than just the contents of the recipe.

I've roasted/grilled cabbage both in "steaks" and in wedges. To me, it didn't make a difference in the taste.

Roasting is a great way to cook vegetables. Just like potatoes can be boiled, baked, roasted and fried depending on what taste and texture you want, so can cabbage and almost any other vegetable.

After 20 some odd years I'm still traumatized by a recipe my MIL called "oatmeal steaks" so I tend to shy away from the term to describe anything other than beef.

I tried it after seeing the recipe on the dinner thread. DH loves cabbage, and he liked it roasted. For me, it was just some variety of vegetable preparation.

Especially if you're going to grill it or bake it. I think it's just this. Usually recipes have you core the cabbage, and then it's hard to deal with without making a big mess of leaves, etc. This method just has you cut the cabbage (with the core intact) in even slices. Many people like roasted vegetables of all types, so I think this is just a way to roast cabbage easily and efficiently.

I cooked it for Valentine's Day like this. It was the first time I've ever cooked cabbage in any form. We had it with a NY steak and sweet potatoes. I just took the 'steak' part of the recipe as a description, not a replacement for a meat steak.
Dh loved it and we will have it again.

I love cabbage and cook it any way I want. I have done this but I called it roasted cabbage. I have always cut it this way because it is easy to work with and it is easy for people to see the serving sizes. If it were cut differently I am sure it would still taste the same as the *steak*.
Did you see the recipe for Melting Potatoes that is further down the page. I think I will give them a try, they look and sound delicious.

I like the "steak" shape over the wedge because it seems to me to cook more consistently where the wedge seems to get over done on the exterior and still too crunchy on the interior. But that could just be me. I also like that I can spread a consistent layer of dressing on the flat shape instead of an edge of a wedge.

Using the term "steak" just refers to the physical look of the thing. It doesn't mean it will suddenly taste like beef. And then there is the "beefsteak" tomato just to make it more confusing for some. ?? ETA. The question marks were supposed to be a wink face.

I have roasted cabbage in slices like this and we both really liked it. I was surprised by how sweet it tasted when roasted.

We like cabbage and prepare them like this as a side dish occasionally. I use different spices - small flavorful seeds go well with this one (fennel, celery seed, etc.). Another Version

But the oatmeal steaks are somewhat self explanatory except that the full recipe is called "Oatmeal Steaks with Mushroom Gravy" the mushroom gravy being a can of straight cream of mushroom soup, which was the highlight. Her other favorite meal to serve to her loved ones was: 2 cans veg-all, 1 pouch minute rice, 1 large can tomato sauce, microwave for 5 minutes, serve hot. I had no clue what veg-all was. I learned so much from her.

C'mon, I doubt anyone thought it magically morphed into beef flavor! But maybe some people thought it sounded more palatable than cabbage slabs, who knows? Lettuce wedges belies that for sure.
My DH loves a classic wedge salad because it reminds him of his childhood. If I could find some aluminum plates to chill before serving it with blue cheese chunks, cherry tomato and curly parsley garnish he'd be in his version of elementary school elegance (1960s style).
