It's already March? Well, time to think about spring dinners pretty soon. For now I think it's a taco night. In fact, I'm calling my day Tuesday tidying and taco day. What's on your menu? Have a great Tuesday everyone. For those in states that apply, have a super Tuesday. Was that as bad as I think it was?

Pasta carbonara and raw zucchini as a side (2 of my kids will only eat it raw).

Ovenbaked chicken with a cream sauce, bacon sprinkled on top (because almost everything is better with bacon), served with pasta andre a green salad. Hope the kids like it (fingers crossed).

I know, I cannot believe it's March already. And I went out first thing and voted, so I got something done today! I'm thinking tuna noodle casserole for dinner tonight, not something I make very often, but it sounds good and I have all the ingredients on hand.

Huh, Taco Tuesday? I think I just figured out what's for dinner. Chicken tacos with salsa verde my favorite.
eta. 10 more days until I turn 64. I'm feeling old all of a sudden. Can't believe it's March 1st.

I'm trying a baked Southwestern Egg Rolls recipe from Pinterest, Pico de gallo, guacamole, chips and probably some fresh fruit.

Can't believe it's March 1st. I hear you. I turn 65 Sunday which is impossible because I still feel like I'm in my 30's. I had a total meltdown when I got my Medicare card in the mail and to add insult to injury they send it to you about 6 weeks in advance.

Let's just say that my one luxury to myself is my set of gel nails I had an appointment booked for next Monday to get a fill but now one of my nails is totally lifting I'd probably stick it out but I'm going to SIL's 50th birthday party this weekend and I would feel like crap if my nails looked bad So I managed to get my nail lady to squeeze me in at 5:30pm today which means I need to get dinner ready for the family before I leave ... yay. I'm thinking I'll make pot roast with mashed potatoes, gravy and some sort of veggies ... Since I'll miss dinner I'll probably eat soup ... no biggie

Haven't been in the menu-planning mode lately, so I think we'll go with another something simple... with help from the freezer. An asparagus, carmelized onion, hatch chile, cheese fritatta. Everything's ready except for adding the eggs. Love my freezer!

Soup and crackers. It's what's for breakfast, lunch and dinner! We're all feeling cruddy from this stupid cold. It could be worse, my boys could have the dreaded man cold. Fortunately, they have managed to escape that malady so far. Right now we're sucking on yucky throat lozenges, curled up on the couch in our jammies, sharing a box of Kleenex and watching Animal Planet. I need a nap.

My ds has an ortho appt this afternoon 30 mins away and it's right before dinner time so I obviously didn't plan something quick and easy. I'm making breaded chicken tenderloins that I'll bake in the oven, steamed cauliflower, quinoa mac and cheese and oven baked asparagus for dh.

I didn't cook all our salmon the other night, so it will be salmon, wild rice and a veggie.

Cod with baked potatoes and a veggie. I will likely eat lima beans with possibly corn for the kids.
I will likely just use lemon and butter with a little seasoning to cook the cod. Super simple - it's a busy day!

Well, I didn't make the chicken pot pie casserole yesterday. Busy day. I was actually planning to stop at Taco Bell on the way home from tae kwon do, but the 6yo said he'd rather have "dinner cooked at home." So we had fish sticks and tater tots from Trader Joe's and zucchini ... the fish sticks were okay but I thought the tater tots were crappy. I'll try the name brand next time. So today I'm going to live dangerously and sniff my Costco chicken which is now a week old. If it's still good, I am absolutely, positively using it up tonight. Otherwise <shrug> who knows. Maybe pizza. I'm going away Thursday for the weekend and I don't want to leave anything half-eaten.

At first I was thinking about sausage, eggs and blueberry pancakes but...
I have to go into Anchorage today and there is a Costco, and they have rotisserie chickens, and that would mean that I really don't have to cook so.............

I am 64, too. But young at heart!
Popcorn shrimp, spiralized potato strings, broccoli, leftover spinach and quinoa/barley soup.
I wish I had a dessert, but we are trying to cut back. I checked a cookbook out of the library - whole grain and honey recipes. I'll study it later and see if I have all the ingredients for something a little sweet.
Thanks for the thread.

We're having poppyseed chicken with brussel sprouts tonight. I have some leftover dough from making bierocks the other night, so I might see if they will rise enough to become dinner rolls.

Everyone's dinner sounds so good! Dh has a meeting at our usual dinner time, and since there's no telling how long it will last, nor how long the commute home will take, I need a dinner that can be served 5 minutes after he walks in the door at "who knows o'clock". So, I'm serving egg salad sandwiches in whole wheat buns, minestrone soup, and apple slices and blueberries. There are a few members of my household don't think soup qualifies as a dinner, nor do sandwiches. If I serve both non-dinner items in the same meal, they're like negative numbers, right? Two negatives make a positive?

March is a busy month for us.. Two adorable boys have birthdays (11th and 14th), we're taking them to their first concert on the 13th, school, work.. Plus, it's supposed to be raining for the next two weeks. I heard it's supposed to be as much as we get in 3 months. Ugh, I am ready for a vacation in the sunshine!! We're going to Dh's parents house. Boys requested pancakes and bacon
