Tonight feels like a good soup night. So, it'll be chicken tortilla soup or chicken and noodles. I'm still deciding.
What's on your menu?
Have a really good Tuesday everyone.

Sunshine here. Yay!
We're having Greek chicken orzo - my one pot meal of shredded chicken, orzo, chopped spinach, chopped tomatoes, olive oil, and feta cheese. Jam cake for dessert.

Smoked salmon, zucchini (and garlic), served with spaghetti. I'm really craving something sweet, but I'm trying to avoid desserts except on the weekend. But I really, really want icecream....or brownies! (Or both!)

Something take out. Our refrigerator has been tepid and warm for the past 24 hours and I have a repairman coming this afternoon. After I toss out most of the food, I'll be off to the store to replace the basics. After all that fun, cooking dinner is not a priority.

Uncertain. I'm picking up my mom for a meeting after dinner, but she'll certainly want to feed me before we leave.

We're having Fiesta Ravioli, but since the recipe looks quick and easy, I'm changing it so it won't be. That's how I roll. I'll serve it with roasted broccoli and cauliflower, apple slices and blueberries, some sort of bread product, and cupcakes for dessert.

I usually grocery shop every weekend, but I've still not managed a trip to the store since the previous weekend; therefore, it's find food from the cupboards each night.
Tonight we're having barley/bean/pea/corn/olive/and whatever else I can find to throw in salad.

I'm looking forward to dinner tonight. Both items I am having are best if made the day before and left to refrigerate overnight. I made them last night and I am having them for dinner tonight.
Crab & Pasta Salad Watergate Salad
Not the most balanced of meals but will be yummy!

We're having sausage and veggie calzones. DD is wanting to make a Caesar salad, so I'll let her do that as a side.

Sloppy Joes tonight. Probably just chips as a side and the veggie tray I bought the other day for the veg.
Last night, no one really wanted Fajitas, so DH had leftover steak from Saturday with pierogi, I just had pierogi, and DS had some canned Pasta Shells and Meatballs when he got home at 830 pm.

Dh has a whole bunch of shit to do with his buddy this evening ... I don't even try to keep track ... something about picking up a vehicle Anyway, he also has a real estate appointment tonight so he won't be here for dinner ... Normally I would do a fend for yourself night but since we did that last night I'm thinking I should probably actually cook tonight The plan so far is potato and onion perogies with lot's of sour cream

Something very quick and easy tonight, I've just got back from dropping DD at the mainline railway station as she's off to a conference in London, no-one else in until late tonight so I've decided to have pizza and finish off some Greek yoghurt and blueberries for dessert.

I got some haddock out of the freezer but wasn't feeling very inspired by it so I've decided to make a fish curry with it which'll be a bit more exciting.

Per littlemama's request... This is so easy and I just throw in whatever amount of any ingredient that I want or have on hand. It tastes good the next day since it's basically chicken pasta salad. I most often prepare half a recipe with one boneless breast and 4 oz. of orzo. Greek spinach and chicken orzo 8 oz. orzo, cooked and drained 1 roasted chicken, skinned and shredded 3 cups fresh baby spinach 1 large tomato, chopped (sub quartered grape tomatoes) 1 cup crumbled feta cheese 1/2 cup pitted and sliced Kalamata olives 1/2 teaspoon salt 2 tablespoons olive oil After draining the orzo, return to pot. Stir in all other ingredients; cook 2-3 minutes at medium until heated through.

Thanks for the recipe valleyview; this sounds delicious! I found some nice deli roast beef last night on a killer sale, so I will be making the boys sub sandwiches with pepperjack cheese (their fav), red onions, tomatoes and lettuce. Whatever condiments they want. They usually like their sandwiches toasted, so I will accommodate them! I might eat a small piece of roast beef, but I am still eating only a bit or two of beef/pork here and there. So mine will be just cheese and veggies with oil and vinegar and herbs. Lisa

My meatloaf balls turned out good last night. That was a winner. I took chicken out, but not sure what to do with it yet. I'll do some searching on the web to see what I can find to make.

Baked chicken thighs with veggies and pasta.
Not sure when DS will eat as he has back to back to back activities. Oh well that's his issue. Lol

I don't know! I've got a chicken carcass in the fridge from this weekend that has to be turned into stock for soup today or else. And I have left-over vegetable beef soup in the fridge too. I really don't want to have back-to-back soups and I don't have room in the freezer for the stock. What to do? Hmm.. as I think about it maybe I can reduce the stock down and make a chicken and noodle type casserole with a biscuit topping for tonight. Not exactly inspired but it would solve the problem.

I am grilling another marinated flank steak. I am also going to roast broccoli and cauliflower. Not sure what else.
My family loved that I served pie of pi day. They didn't care that it was pi day but really liked the pie!

We cut grass this a.m. It was mostly weeds and little purple flowers. Glad it is done. Temp is already up to 80 degrees. So we had leftover spaghetti from yesterday but added garlic toast for today.

Three of the four of us met for a nice lunch and ate more than normal so tonight will be a "fend for yourself, eat when and/or if you get hungry" night.. I might skip supper all together and have fresh fruit over frozen yogurt late this evening.

Lots of yummy stuff already posted. I am making pork roast hash with potatoes and carrots. Roasted asparagus. A pie that is super easy for anyone - crust, a jar of strawberry rhubarb jam, a streusel topping with chopped pecans and whipped cream on top. I have used other jams, too, but I bought this from a farmer's mkt. last week. Delicious (and very tasty for breakfast, too) and easy peasy.
Thanks for the thread.

I'm trying a new Baked Ziti recipe. It looks like it's going to make a *ton* so we'll probably have leftovers tomorrow. Green beans, salad, garlic bread.
