Okay gang, this is going to cover a longer period of time because we leave for Disney World tomorrow! We will be back on Easter, but I doubt people will want to spend too much time online that day. This past week has included another pot of yogurt and a big pot of beef, barley & veggie soup. I am a little disappointed in my Fagor Lux, because all of a sudden the little pressure valve that tells you that the cooker is locked when it rises started falling out when I turned the cooker lid over. And then when I filled it with soup, the valve rose, but steam continuedto escape and it never came to pressure. I got online - scoured my manual, which was no help. And looked for trouble shooting - no luck. I finally went to the replacement parts section of the Fagor site and saw that they were selling a gasket for this valve. Clearly, mine was not still there. I didn't remove it. I'm not happy that it apparently came off so easily. And that I had to pay $11 to replace a tiny piece of silicone on a 2 month old pressure cooker, that is useless as a pressure cooker without it. So, just a FYI for those interested in the Fagor Lux. On a positive note, I came across This recipe for a one-pot chicken burrito bowl made in a pressure cooker! This one is for oh yvonne. It would be perfect for a family that eats sane amounts of food at dinner. I'm not sure it would make enough for my boys and me, but I still think that I will try it the week after we get home. How's everyone else doing?

Disney World!! That sounds like so much fun and you're going before it gets too hot!!! That's wonderful!! Have a great time!!!
I'm still patiently waiting for the Insta-pot to go on sale. I'm holding on to my Bed, Bath and Beyond coupons and I keep checking in on Amazon, waiting on a good deal. I'm a stickler for getting a discount if I can.
The burrito bowl looks AMAZING!! I will have to try it. I had intended to make a white chicken chili tonight in my pressure cooker and have the leftovers to carry me through the week, but then I saw this recipe on FB this morning for a grilled buffalo chicken sandwich that is just calling my name and I will be making that tonight instead. Buffalo anything gets first billing at my house!!! LOL
Have a great trip and thanks again for these posts!! I look forward to seeing the recipes. My PC has a tiny little silicone part that I have trouble keeping up with too. If I don't have my reading glasses on I can "lose" it very easily.

Yum! You will have to tell us how the buffalo chicken turns out, triplejscrapper - my older son and I love all foods Buffalo! Tonight I am making shrimp creole in my instant pot. It is a recipe from the Great Big Pressure Cooker Cookbook. The sauce is pressure cooked, then the shrimp is sautéed in the sauce for a couple of minutes after it is done. I haven't made it before, so I'll update with how it turns out. I will serve it over rice, but will have make it in my rice cooker because my second pressure cooker is out of commission.

How's everyone else doing? Elaine! Thank you for the recipe, that's a perfect weeknight recipe for the three of us, yes, lol. That is a bummer about your Fagor! I wonder if it's still returnable? I have an Instant Pot and I belong to the Facebook group. I've seen a random post every once in a while that a pot has an issue, but it's mostly user error stuff. I hope you can replace yours or return it. I wouldn't be happy either! I used mine last night to steam the broccoli for dinner. I'd read to set the machine on Manual and "0" minutes. I was totally skeptical, and I had a huge bunch of broccoli to cook so I did mine on "1" minute and dag gum it was perfect. I love this machine. My yogurt..is the best.yogurt.ever. I even gave some to friends and they all raved about it. Its so creamy and rich and delicious. Not too tart. I bought a bag of frozen blueberries and a bag of frozen mixed berries at Trader Joe's and cooked those down with some sugar to top the yogurt with. Sprinkle with some brown sugar on top and it's just sublime. I also made cucumber dip (taziki?) and again, marvelous. I will never go back to buying store bought yogurt again. This is fun to make and wonderful to have on hand. I just bought two gallons of milk at Costco and used one for the yogurt. Not sure what's on hand for this week. I need to get organized and jot down some recipes. Probably try a soup, I'm thinking. How about everyone else?

I made hard boiled eggs in the pressure cooker yesterday. AND it was amazing!
The eggs were fresh and they peeled like a dream! They were cooked perfect and the yolks were completely yellow with no green around them!
I made them 18 at a time in the cooking basket.
I put 1 cup of water in the bottom of the pressure cooker. Added the cooking stand and the basket. I put the eggs all in one layer. Brought the cooker up to low pressure for 14 minutes Natural release method for 5 minutes Put eggs into ice water bath for 5 minutes Peel
Once I put them into the ice water bath, I started another batch. Peeling them was so easy!
