This is clean out the fridge night - because the garbage man comes tomorrow. Also there is something stinky in there and I going to find it and out it goes. So whatever is in there, we are eating it first and throwing it our second. More later.....

calgal08 - Wow. Thanks for the recipe. I love a good beef with beans recipe. I'll be using this one next time chuck roast goes on sale. Tonight is grilled artichoke and black olive pizza. I have been waiting all day to make it. Dh grilled the artichokes and chopped the black olives for me. I made the dough earlier before I had to run errands. One more hour and it goes into the oven. Which is now fixed. Yay for electrical elements in the nearest town! Thanks for the thread.

Our boys have well child checks this afternoon. Our youngest gets shots Sooo we will most likely get take out and rent a movie to watch after dinner. Most likely will be a hamburgers and fries from a local diner.

Since it is pretty cool cold right now, I took some homemade vegetable beef soup out of the freezer before we left for the movie. Green salad and bread for DH and DS.

I grilled chicken drumsticks, onions, zucchini, red pepper and asparagus and made focaccia bread (the bread I have ever successfully made).

A couple of weeks ago, someone said she was making tuna noodle casserole for dinner. It's kind of been on my mind ever since. So maybe I will make that. Otherwise, it's leftover chili rice for me. Hello, my name is Joy. I have never made a tuna noodle casserole. I am a failure at life.

The plan was to grill chicken, but it's crazy windy, so I'm doing baked chicken with fettuccine Alfredo, and roasted asparagus.

That is so funny...tuna noodle casserole has been on my mind as well and I am seriously contemplating making it tomorrow for the first time in what would be 20 plus years. I am not working right now and one of my good friends is so I feed her every other week or so on a week night to give her a break. She comes over after work on a night when her son is at his dad's and sits at the bar while I cook for her. I figure us single moms need to stick together and take care of each other when we can-gives her a break and gives her a chance to let someone take care of her for at least one night. Anyway, it was't a really elaborate meal-it was standard black beans and rice night. I am not sure if she liked it or not, but she is like family so that means like everyone else, it is take it or leave it. But at least she didn't have to prepare or clean up afterwards (that is part of the deal) so I don't think she really cared.
