Tonight we're having a fend night. I made 2 pasta meals last night and we have leftovers in the fridge that must be eaten.

I have to go to the store. I am a one hit wonder, can only plan one day ahead and nothing more than that I guess!
I was thinking pork chops and fried potatoes. Maybe a salad to go with and applesauce.

Ooops! It's almost 4 pm, I better get started on dinner right now! (Smoked salmon, garlic and zucchini, served with pasta. And ice cream for dessert.)

Dh is taking his Mum to a couple of appointments this afternoon ... she's not allowed to drive at this time ... I'm going to make chili here and bring it over to MIL's place along with some nice buns and butter

I've got choir rehearsal, so will have a part of a grilled chicken breast BF grilled for me when grilling burgers last night. Go withs of the eternal bean salad, and roasted potatoes, perhaps.

While DH awaits gall bladder surgery a week from today, his doctor put him on a BRAT diet (bananas, rice, applesauce, toast) Not too exciting, but easy to fix. Tonight is rice and a small salad. Any other food suggestions for someone awaiting gallbladder surgery? This diet seems to sitting pretty well so far.

Last night I made a couple of huge pans of beef and bean enchilada casserole. We'll have that tonight with yet to be determined veggies. The rest of the enchiladas will hit the freezer for another night.

A couple of weeks ago, someone said she was making tuna noodle casserole for dinner. It's kind of been on my mind ever since. So maybe I will make that. Otherwise, it's leftover chili rice for me.

We're having roasted pork loin with gravy, rice, roasted butternut squash, roasted broccoli, carrots, and corn, our fruit component is cranberry-orange bread , rolls, and a pineapple-toasted coconut dessert.

scrapmaven & hop2, I am loving those phrases! So does that mean if I call it something different (yoyo, fend nite, cop out nite, etc.) every nite that I can get away w/not cooking every nite? lucyg I want to come over if you're having tuna noodle casserole. NO ONE in my house will eat it, so I never bother to make it. Tonite it's hot dogs and mac & cheese. And yes, I remembered to buy the trashy box so I won't be making any more nightmare in a pot versions.

Roasted pork loin, mashed potatoes, corn and salad. I may steam some veggies to go with my pork instead of the potatoes and corn. I'm having lunch with my dh and some friends tomorrow at a Chinese place and then at the Cheesecake Factory on Sunday for Easter/my bday. So I'm trying to keep my eating on the lower side on the days I'm home and prepping my own meals.

I had to wait 2 weeks for my gallbladder surgery and from experience, anything that was very low-fat or zero fat was the best. I lived on fat free saltines, chicken and turkey tenderloins and white rice.

lucyg I want to come over if you're having tuna noodle casserole. NO ONE in my house will eat it, so I never bother to make it. I know, right? Actually, my son will eat it, but the 7yo turns up his nose. So I haven't made it in a long time. But I don't think he'll be here tonight, so it's a good day for tuna noodles.

I have a dear friend of 10 years. She has 5 kids, and ours have grown up together. We like to go to the drive-in during Spring and Fall Break. Tonight's the night! My kids aren't on break, but they have late start tomorrow, so it still works out okay. So I will probably just take the kids to Sonic and bring snacks to the drive-in. I am not sure what we will see. Lisa

I want some. I couldn't pay my family to eat it so I've never made it. I was going to make chicken parm but forgot to thaw the chicken, so that'll wait a day. Sooooo, we'll either repurpose the leftover fajitas meat from last night, or dh can bring something home.

Everything is all change here this evening so I've given up on dinner! I'm the only one in at the moment and now have to do a trip to the airport. So, I think it may just well be McD's tonight......and some ice cream at home later!

I'm feeling a bit uninspired today, and I think we'll be having some Trader Joe ravioli. I intended to have it last week, but DH wanted meat. I've informed him that he can have ice cream for dessert.

I know you are all wondering what finally happened as far as dinner at my house last night - it was McDonald's after the dodgeball tournament. DS team was eliminated in the first round, but since we paid $3 each for dh and I to watch, we stayed until just before the final game. We would have stayed til the end, but by leaving, I ensured that DS would have to pick up dinner! I had Jersey Mike's for lunch, so probably won't be hungry at dinner and even if I am, I don't need to eat very much. I think I will make DH and DS frozen meatballs, Prego and pasta for the total convenience meal! If I get hungry, I will have a sandwich or an egg.

Tonight is roasted chicken and broccoli. I bought one of the Perdue roaster in the bag chickens after having it at a friends and great googley moogley..those things are good. So I bought one and will stick that in the oven when I get home. Hope you all are having a fantastic day!!

TIA It's not an official recipe, just something I made up, here are the approx. ingredients/quantities I used this time:
3lbs chuck roast rubbed with salt and pepper 6 cloves garlic 1/4 cup stock 1 tablespoon chili powder
Dump the above in a crockpot and cook on low until meat shreds (I cooked it overnight)
Once shredded add: 2x cans pinto beans 2x cans black beans 2x cans kidney beans bunch of chopped cilantro Salt, chili powder, garlic powder & cayenne pepper to taste
Layer: Tortillas Meat/Bean Mixture 1/4 cup shredded cheese
Repeat layers - I think I got 3 layers out of it.
Pour a large can of green enchilada sauce over the top. Add shredded cheese.
Bake @ 350 for 30 mins
