Hi everyone, Dd#2 won't be home for dinner and dd#1 is feeling a bit ill so I'm hoping to just get takeout tonight because I've cooked every night this week (like I usually do) ... I'm not sure what we will get but I'm thinking it will probably be pizza from a great local place called "The Place" What's on your menu tonight?

Everyone is sick here, so dinner was just a rotiserrie chicken and pasta......and some lemon cake from yesterday.

We had a late brunch today so dinner will probably be beans and bacon on toast followed by Greek yoghurt, blueberries and strawberries for dessert. Hope it isn't long before you all feel better miominmio.

Pork tenderloin, garlic mashed potatoes, pork gravy and a vegetable. ETA: Okay, I changed my mind ~ having lasagna with a salad tonight and the pork tomorrow night. It is a woman's prerogative, right?

We're on our own for church tonight so I told dh I'd cook so we could eat before we go. I made stuffed red peppers! It's been quite awhile and dh loves them and since I made them they'll have lots of flavor!!

We are having left over enchiladas and I will be serving it with a garden salad. Love love love left overs. Barely any dirty dishes (3 plates, 2 pyrex glass pans, 3 forks, and ds's small plate for his few chips) and besides the salad, no prep!

We are having lemon, artichoke and asparagus pasta with mushroom ravioli. It is sort of a lightened up version of an alfredo and we love it. I use fat free half and half, use very little butter and just top it with shredded Parmesan. Will have a small salad with it.

Between DH's tender stomach and me back on 21 day fix, we are rather plain tonight. Rice and veggies for him and whole wheat toast and fruit salad for me. We are looking forward to a nice night in, curled up on the couch, watching a movie.

I'm on dinner duty for Easter dinner for 15 people today. DH's sister normally does a huge Easter dinner, but she opened a retail store last fall, and it is doing well, so they are so busy with it open today, they just didn't have time to do dinner. So I was doing it for my family, but my brother can't come. So DH invited his parents, and then his sister as well. They always do the big family dinners, so it is only fair I do one!
So we are having:
Honey glazed spiral ham Julia Child's Potato Gratin Dauphinois Glazed carrots Roasted brussle sprouts Pea salad - a la Pioneer Woman (it went up my Facebook feed last week so I had to make it) Spinach/dried cranberry/toasted almond salad with poppy seed dressing Pillsbury crescent rolls
My mom is on dessert detail - something lemony/whipped creamy, and something ice creamy I believe!

Leftovers from last night - turkey, stuffing, mashed potatoes & yummy gravy. May make it an open-face hot sandwich.
I cooked a bone-in turkey breast and the bones are simmering in water with a bay leaf, garlic cloves, onion & celery right now. Tomorrow will be soup with added celery, bow pasta, carrots, onions & a few potatoes. I will add the leftover gravy to the soup. My home smells really good right now.

I worked an estate auction today from 8 am to 4 pm, so we are going out. I still need to make two dishes for tomorrow and set our Easter table before bed. So I declared a reprieve on cooking supper.

Fried shrimp and leftover broccoli quiche with blueberries and cream for dessert. And an evening on the couch. We were out with our trailer today and are happily exhausted.

I made Pioneer Woman's spaghetti (halved, because her recipe feeds a small army). I chose this because I am celebrating FINALLY FINDING THE PW LINENS AT MY WALMART! Yay!!
It's got great flavor, but next time I will not use nearly as much onion. I don't like onions AT ALL, but cook with them for the benefit of others in my family. I usually only use a small amount of what a recipe would call for, but against my judgement I used the full amount this time thinking they would cook down enough that I wouldn't gag. I love the flavor overall but too many onions are making kind of gaggey lol. I did add more spice as it cooked and I tasted it for flavor to my liking. It's a definite do over (sans the onion extravaganza)
Lunch tomorrow is at mom's and tonight I'm making chicken salad and a gooey butter caked to take with. DD made the MOST adorable cupcakes! I'm so excited for my family to see them. She's been so sad and depressed lately, and it was a joy to watch her get SO involved in making these fab cupcakes. DS in college even joined her!
We will color easter eggs tonight too. It doesn't matter that they are 16 and almost 19, we still have a blast with it. They just won't hunt them anymore lol.
Tomorrow evening my dad is coming over for supper, I plan to make a Mississippi Roast in the crockpot with green beans sautéed with bacon, carrots and mashed potatoes.
