...we're having ham and roasted potatoes and carrots for lunch tomorrow. I want to pop them in the oven before we go off to church so they'll be done when we get home. We'll be gone a little more than three hours. What temp would you put them in at?
(I know some people don't like to leave the oven on when they leave the house, but I'm not too worried about it.)

Honestly...you'd be better off using a crock pot. I would think at any oven temp, they would be dried out.

You could try tightly covering the pan with foil, adding some liquid in the bottom and setting it at like 225 - but yeah, I agree that's probably too long and things may be dry and/or burnt.
Might I suggest roasting the carrots and potatoes tonight, and popping them in to reheat with the ham when you get home from church? I would still cover them and add a little liquid, but whatever the ham's directions say for reheating should take care of it.

I don't even heat ham at all. I just serve it at room temp. Me, I'd just leave it out to warm up while I was at church. The veggies, maybe I'd roast them halfway before I went out, leave them out with the ham during church, and finish roasting at lunch time. Yeah, I know, not what you asked and no help at all. Can you set your oven to come on while you are gone? That way they won't be on for the 3 hours that you are gone.

I wouldn't want to leave them in the oven for that long as I would be worried about then drying out too much. Could you par boil them, then put them in the oven on high heat for a while after you get back? Or even cook them in the oven for an hour, take them out, then put them back in for half an hour before serving?
