Hey everyone, Our family will be having Easter dinner tomorrow instead of today because my niece has to work tonight (she's a hostess in a restaurant) ... I asked dh what he wanted for dinner and he said "salad" The dd's will not just eat salad ... we all know that So I pulled some chicken breasts out of the freezer ... I'll update when I know what I'm doing with them Are you having Easter dinner today or something else?

We have seven for Easter lunch. We are roasting a full leg of lamb encased in a rub of garlic, rosemary, sea salt, and olive oil -- it smells soooooo good. Sides are roasted potatoes, mac & cheese, pea & asparagus casserole, and "pink" salad (a congealed salad). I also made Salted Caramel Oreo Icebox Cake for dessert.

We are having Easter dinner today. Ham, sweet potatoes, salad and our dogs favorite.... our Easter bunny cake. Not that we would intentionally feed the dog cake, but the dog managed to fed itself bunny cake every year since we moved into our new house 3 years ago.
What makes it really weird is the dog has an oppertunity every night of the year to steal food off of the table and/or counter and the ONLY food she has attempted to eat is the coconut bunny cake. I like to think of her as a new age suburban hunting dog.

We are going over the river and through the woods.... I was asked to bring bird nest treats and will be making my third batch this week! I am also going to try and make a pineapple casserole. A while back, a pea mentioned she makes this but I forgot to write down her recipe so I found Paula Deen's version online. It includes a stick of butter and cup of sugar!! am I nuts?

We're having a big family gathering at DM's. I'm bringing brisket, party potatoes, deviled eggs, dill bread and rolls. There will probably be about 30 people. This will be the first time neither of my kids will be there.

We are having Easter lunch. Roast pork loin with a brown sugar, dijon mustard and fig preserve glaze with bacon on top(I know, pork on pork?), slaw, mashed potatoes, green beans, broccoli salad, deviled eggs, roasted asparagus. With warm banana pudding for dessert. Then all the kids will leave and head back to school and jobs. I am sure DH and I will have either leftovers or cereal for dinner tonight. Oh and I have some strawberries in sugar and angel food cake for strawberry shortcake.

We're going to my in loves for dinner. There will be ham, twice baked potatoes, smashed sweet potatoes, rolls, ambrosia salad.
I made broccoli salad and homemade carrot cake cupcakes with cream cheese frosting!!

It's a very wet and chilly Easter Sunday here in my part of the UK so no walk on the beach today - but the Easter Bunny did manage to get through with a large box of my favourite chocolates! Work shifts are keeping a couple of people away today so we will be having our family Easter meal tomorrow. Tonight we are are having gammon ham with pineapple and mango sauce, new potatoes, broccoli and other veg followed by lemon meringue pie for dessert.

We are having cola glazed ham, baked cheesy potatoes, roasted Brussels sprouts with balsamic glaze, broccoli-cauliflower salad, deviled eggs, whole wheat rolls and cherry coke jello salad.

We're having a ham (I have a very small spiral ham from Trader Joes), asparagus, cheesy potatoes (I'm working on them right now-- it's a lighter recipe I found on Pinterest), rolls (store-bought, as my family loves them for some odd reason), some sort of warm fruit compote that my MIL is bringing, and jello pretzel dessert.

We are headed to good friends later with ham and Swiss cheese rolls with that sauce poured over them before baking. A spring lettuce salad with asparagus tips, avocado, pear, and expensive cheese (that a certain someone in my house thought was a good way to celebrate) crumbled on it. Greek dressing. Friends will provide a huge fruit salad.
And I could not resist a red and black lumberman's shirt for $3 at Kmart for the friends' three-year-old. Gosh, little kids' clothes are so cute.

My DIL's mother invited me to join them for dinner this year. I understand we are having BBQ ribs but not certain what the rest of the menu will be. My part is dessert, which will be apple and key lime pies. My DS wanted apple but I wanted key lime so both were necessary.

We're having.....wait for it.....ham! We're also having: funeral potatoes, Three Cheese Chicken Alfredo Bake (because one person is anti-ham), roasted butternut squash, roasted cauliflower and broccoli, steamed green beans, carrots, and corn, deviled eggs, lemon creme jello, fresh strawberries and pineapple, and Hawaiian rolls. When I asked DD for dessert suggestions, she said either hot milk cake or my grandma's chocolate cake so...I made both. I made them into cupcakes, instead of cakes, because my family gets bored with a dessert after two days and cakes just sit there and die a slow, stale death.

I don't really have anything to do today. My kids are gone and my in-laws that I used to spend Easter with moved out of the area. My sister invited me to BIL's family's Easter dinner but meh. So I'm home alone and I think I'll have these bacon-cheese-zucchini muffins along with deviled eggs and Easter candy (which I've already made inroads on).

ETA: Everyone's menus sound delicious. You're all making me salivate! I am making a prime rib roast. I don't love ham, one of the dds thinks turkey is only good on Thanksgiving. Trying to find something different that we would all like, so prime rib it is. Also serving parmesan herb roasted new potatoes and asparagus with hollandaise. Dessert is tiramisu, dd's famous lofthouse cookies, pound cake with strawberries and whipped cream, and last but not least, Bunny Tracks ice cream. I already made deviled eggs for an appetizer and they disappeared pretty quickly. I use a basic recipe but topped each one with a bit of bacon. yum
