I bought a roast chicken the other day at Costco. So, I'll use it tonight and make a chicken and rice soup.

I'm having lunch with my mom today, and we will repeat yesterday's dinner, which I made. Roast leg of lamb, au gratin potatoes, and roasted asparagus, spinach salad. Pound cake with berries in limoncello for dessert.
After all that, I'll have to skip dinner, or have a piece of toast!

There's a Panda Express opening about 2 miles from my house next month, but I've got a craving now. So we're having beef and broccoli over a copycat version of Panda Express noodles. That should hold me over until the restaurant opens.

Tonight is our family Easter dinner ... we couldn't do it yesterday because my niece had to work and SIL is hosting so it wouldn't be the same without her there ... We'll be bringing a shrimp ring, veggie tray and chocolate trifle Oh, and my Mum

I am giddy to have a no cook day with a house full of leftovers sent home with us by my mother-in-law who could be best most over-the-top holiday cook of all time.
We have
corned beef, baked chicken, ham, kielbasa, sauerkraut, german potato salad, rolls(homemade), baked beans, corn, deviled eggs, cheesy potatoes, brownies, cheesecakes, lemon bars.
She made ALL OF IT. She's crazy, and I love her :-)

My oven worked hard the last few days so I'm giving it the day off. Which means I sort of get the day off too, I suppose. I took some Black Bean and Butternut Squash Chili out of the freezer. I'll serve it with salads, leftover deviled eggs, leftover lemon creme jello, cheese and crackers, and there are cupcakes from yesterday for dessert. jassy, do you think you could wrangle an invite for me to the next holiday meal? That's some meal you MIL single-handedly made!

I posted on the Easter picture thread that we found out we were hosting Easter on Friday. Not a lot of notice, we thought we were going to SO's mom's. So, we put it all together and with that, for dinner we will have leftovers. Turkey, ham, mashed potatoes, green bean casserole, corn casserole, stuffing, cranberry sauce...

haha, I can try Trixie Bender. She lets us all bring one side dish each (and none of those are included in leftovers I mentioned - there was SO MUCH food). She's retired, and loves to cook more than anything in the world. I love it too - but she barely lets me cook anything for the holidays and it offends her if I push too hard. Says she wants to do it as long as she can. Alrighty then! ;-)

I went to "Stuff Mart" last night and grabbed a few things for pre-made meals this week. I have tons of work and did not want to think about meals. I got ribs from the deli, fried chicken, rotissiere (sp?) chicken and turkey bacon - I will cook that! So glad to have my meals mostly planned without resorting to take out each night. Super easy. We will eat the fried chicken tonight with baked potatoes and corn or mixed veggies. Lisa

I'm suffering from an Easter hangover...which is nothing more than being up at 6am yesterday morning and out and about until 7:30 last night...ate my first big cheat/unhealthy meal of 2016 and feeling kinda bloated and sluggish. Soooooooooooo, it's easy and quick. Ham steak and steamed cauliflower for dinner tonight.

Kiddos are back in school after their 2 week Spring Break. Dh is off on his last. Love how his is off set by a week. Get to spend that time with dh.
Anyways we are using the left over chicken from last night for burritos. Dd will of course just have the insides.

After a delightful weekend visit with my brother and his lovely lady, we've got a fridge full of leftovers. On the menu tonight is leftover chicken-lickin' good pork chops, tomato/vegetable casserole, and homemade applesauce. Dessert may be apple cake w/brown sugar glaze and a scoop of dulce de leche ice cream.

I think soup ... broccoli cheddar or split pea. I'm craving broccoli cheddar but I don't think there's enough half-and-half for that. I need to go out tomorrow anyway, so I'll probably wait for it till then.
Or maybe deviled eggs? Corned beef sandwich? We'll see. I really need to freeze that corned beef now if I'm not using it right away.
