We had many errands to run today because it was time. Got them all done and was not in the mood to cook so we did the McDonald's Pick 2 for $5.00 for the last time - they were taking down the signs as we were there. Anyway, I had my Filet of Fish and he had a quarter pounder. We are happy and tired. After we finished a neighbor came over to thank us for taking care of their two dogs this weekend while they went camping. Good thing we had already eaten because this neighbor is one of those that will just join right in whether invited or not. Have a good week!!!!

We played 9 holes of golf today at the county fairgrounds ~ the course is inside the race track ~ fun little course. Despite being windy and COLD, DH and I had fun. We got home and several hours later it started hailing! That is my long winded way of saying we're having vegetable beef soup so I can warm up these old bones.

Homemade (vegan) pizza, again. I'm quite hooked on them. I use a whole wheat pita for the crust and it cooks up just perfectly.

I made slow cooked lamb with roasted potatoes/pumpkin/sweet potato, broccoli & cauliflower with cheese sauce, and peas & corn. So much food that I had to invite my brother and his family over for dinner too. Plus leftovers for me for lunch today.

My 16 yo dd and I have not been getting along today, so I don't much feel like making an effort. Bad Mom. (and I don't care! ) oh honey btdt a LOT lately with my 17yr old ds, man he and I have butted heads sooo much lately. and he bought this truck that has soo many issues and he's probably going to have to pull the motor and practically rebuild it..sigh.. but he's a farm kid and has been a part of many a tractor motor rebuild,so he says he's not in over his head. guess we'll see. I of course just see $$$$$s

Tonight's dinner was delicious, if I say so myself!
Lemon/garlic/Dijon salmon, roasted brussel sprouts that got tossed in a balsamic sauce, and cous cous. Even my non-vegetable eating son ate all the brussel sprouts willingly!

Montannie Here you go. When I make it again I will go heavier on the peanuts there was not enough crunch a little too mushy for my picky ds. The rest of us loved it. From Delish Ingredients 1 package instant chocolate pudding mix 2 c. milk 1/2 package chocolate wafers 1 container cool whip 1 jar caramel sauce 1/3 c. Chopped peanuts 1 Snickers bar, chopped Directions 1. Whisk chocolate pudding mix and 2 c. milk until no lumps remain in the batter, and leave for five minutes to set (or follow the package's instructions, if they differ). 2. Layer chocolate wafers in the bottom of an 8-inch by 8-inch square baking pan or casserole dish. Top with a layer of Cool Whip, drizzle caramel sauce on it, then add a layer of chocolate pudding. Pour half of the chopped peanuts on top, then repeat this process until you've reached the top of the casserole dish. Top with additional caramel sauce and chopped Snickers bars. 3. Refrigerate for at least two hours. Serve chilled.
