Tenderise/flatten them and make chicken schnitzel. Everyone can have a small portion with lots of salad.

So they're already cooked? That limits what I'd use them for as grilling tends to make them a bit tough in my experience. I would most likely make a Thai Chicken Salad for our lunches. Or make chicken in wraps with natural yoghurt and curry powder mixed together, mango chutney and some sort of greens (lettuce/spinach/bean shoots/cucumber). That is one of my favorite low calorie lunches.
