Okay, so I have two leftover chicken breasts that hubby grilled this weekend. There isn't enough to feed the family unless I turn them into something else. What would you make with them? Anyone have a great, healthy recipe? Thanks!

Anyone have a great, healthy recipe? Thanks! I'd probably do stir fry chicken, slice them up and add lots of whatever veggies you like, with some teriyaki sauce, or something similar. We get cauliflower rice from Trader Joes to serve with it.

I would cut them up and add them to soup. Not homemade. The canned kind. Great with Healthy Choice soups, especially the low sodium/light. The chicken and whatever seasonings used add a lot.

Or we slice them and make wraps with veggies, one breast will do two wraps.

Tortilla soup. Not the heavy stew kind with beans and corn, but the light, chicken broth based one with carrots, celery, tomatoes, cilantro, lime juice. Not a calorie in a carload. Top with thin crispy tortilla strips.

Ingredients 1 tablespoon vegetable oil 1 pound boneless skinless chicken breasts, cut into strips 1 can (10-3/4 ounces) condensed cream of chicken soup 1 cup frozen peas 1-1/2 cups milk 2 cups Minute® White Rice, uncooked 1/4 cup real bacon bits 1/4 cup grated Parmesan cheese* Add to Shopping List Directions Heat oil in large skillet over medium-high heat. Add chicken; cook and stir 4-5 minutes or until cooked through. Add soup, peas and milk; bring to a boil. Stir in rice; cover. Reduce heat to medium-low; simmer 5 minutes. I would have thrown them in whatever I was cooking and had leftovers for lunch 2 days. After the fact, I would probably shred them and mix with bbq sauce to make shredded chicken sandwiches. You could top with cole slaw to stretch it.

I had four grilled breasts leftover from Sunday. Two were chopped up with apples, celery, grilled onions and almonds and tossed with a mayo/lemon juice/tarragon/mustard dressing to make chicken salad for lunches this week and the other two will be chopped and added to TJ's Multigrain Blend with grilled onions, broccolini and carrots for a super fast dinner tonight.

I make a veggie pasta dish with sautéed veggies (mushroom, zucchini, onion, bell pepper, yellow squash, etc.) and a light cream sauce with 1/2 a cup of white wine and 4 oz cream cheese. I've used leftover chopped chicken in it before, so that's probably what I'd do.

My vote is for Chicken Bacon Ranch Pizza. Basically make a cheese sauce for the bottom, add chicken, bacon and bake the pizza, then top with romaine lettuce and drizzle with some low-fat ranch dressing. You could add diced tomatoes and green onions as well if you like.
