Hi everyone!
The exciting news for the week is that Instant Pot released its 8 quart 7 in 1 model on March 30. So, if you've been wanting an 8 qt machine, this is one to consider.
We just did our weekly grocery run and when DH saw the fresh green beans he asked me to make the pressure cooker southern green beans that I made last week, so I picked up a bagful.
I'm not sure what else will be pressure cooked this week - the meats I bought are for grilling and the kids asked me to rotisserie the chicken. So, I think it will be side dishes and maybe a cheesecake.
How is everyone else doing? Any new recipes?

Last night was Southern Green Beans in my Instant Pot. Tonight, I made a rotisserie chicken and then threw the carcass + carrots + celery + onion + salt & pepper with 3 quarts of water (12 cups) into my pressure cooker. I cooked on high pressure for 30 minutes and then used natural release. I then strained it and now have gorgeous chicken broth to use in cooking and soup this week.

I made apple sauce today. Through in 8 large apples, pressured them on hight for 2 minutes natural release. So easy, and perfect apple sauce. Jen

I discovered that the steamer basket that came with a pot my grandmother had given me as a housewarming gift ages ago fits in the IP. I used it for the first time yesterday to steam fresh broccoli. 0 minutes on steam but it sat on keep warm for a few minutes because I couldn't get to it so it was a little overcooked.
I was going to cook Mac & Cheese tonight but I realized at the last minute I was missing an ingredient! Good thing I picked up my monthly food order today so I had a frozen pizza to throw in the oven!

Another fresh pot of yogurt today in my Instant Pot - it is currently straining so it will be Greek.

I made this tonight and it turned out great. Next time I think I will use a little more soy sauce. I thought that ketchup was an odd ingredient but the flavor of the sauce is good so it works. Honey Sesame ChickenHas anyone pressure cooked frozen boneless skinless chicken breasts or frozen whole chicken?

I have pressure cooked frozen breasts with no issue. I cooked them for 20-30 minutes. I have not tried it with a whole chicken, however.

No new recipes this week, but I have been making hard boiled eggs in it for the last couple of weeks for a curried egg salad that I've been loving for lunch and WOW! I really can't believe how perfect and easy eggs come out in this thing. I've probably made two dozen by now, and for each one of them the shell slides right off pretty much in one piece. It's kind of amazing. LOL. I cook them for 6 minutes and then do a natural release.

There's food safety concerns about a whole frozen chicken so I defrost my whole chickens first.

It has been a fairly quiet week. I actually used my oven last night to bake pork chops and roast cauliflower rice.
The pressure cooker has only been used this week for yogurt and making chicken broth. But I am excited that I will able to use that broth for Matzo Ball soup on Passover - coming up. I put it in mason jars and it is in the freezer.
I'll start a new thread this weekend, but then I'm flying out to Michigan Tuesday morning for double eye surgery on Wednesday, and won't be home again until Saturday night, so no big cooking for me next week beyond a pot of yogurt on Monday. I will be reading, so hopefully there will be some new recipes posted! I do want to try the honey sesame chicken.

I am so excited that I get to really start thinking about what to make! I stated pinning recipes last night-if any of you have Pinterest pressure cooker boards you wouldn't mind sharing (especially with recipes you have tried and enjoyed) I would love to follow them. I am thinking of diving in and doing ribs this weekend. Would love any recipes that are tried and true! (Or any tips for a newbie!) elaine good luck with your surgery and sending quick healing thoughts!
