Finally, home from the hospital! DH was discharged at 3:00 this afternoon I hope he is feeling better already! Wishing him a speedy recovery.

Breakfast for dinner - sourdough banana pancakes. Maybe an egg over-easy on top. I worked all day at the library unpacking for the book sale and saw so many cookbooks - looked through most of them. Now I just want pancakes.

It's frozen dinners for us today. We have a water leak under the kitchen sink and the plumbers are here working on it. Of course, they found another problem that runs from the washer to the sewerage line (ugh). Plumbers tunneled under the house only to find that the pipes were IN the slab - what a problem so now they are doing a re-route. Hopefully I can take a long HOT shower tonight.

It is back to school day after spring break, so it has been a full day. I'm making orange chicken, rice and a side of snap peas.

Our ladies bible study is meeting for appetizers and salad for our last meeting until the fall. I'm bringing dessert......... A strawberry cake with cream cheese buttercream icing. It's such a good cake but I'm not sure if it got done in the middle. I made the cake in a 9x13 Pan for easier carry.

Meatless Monday here. I fixed stuffed zucchini to serve alongside a kale/brown rice casserole. Ice cream for dessert.

www.bhg.com/recipe/pork/the-big-pig/tried this new recipe yesterday (1/2 batch, I had plans for the other 1/2 pound of ground pork), and DH liked it so well he suggested we have it again tonight instead of the other recipe I had planned. I cooked the burgers on the george foreman grill, and they were SO good. So simple, came together so fast. Definite keeper! To make it even easier, next time I might use store bought slaw on these. I didn't think the BBQ sauce in the slaw really added anything.

DSO went to the shops and found a whole lot of pork and chicken skewers on clearance so he bought 4 packs and cooked them up on the BBQ. There was enough meat for 27 people - there will be leftovers for a week! We served it with Thai style fried rice and broccolini.
