Happy Monday. Last night I was planning to run late errands and go to Chipotle. Instead I stayed here and cooked Chicken Mozzarella. So, today I have appointments and errands and that means Chipotle. If I poop out the plan will change.

Good Monday morning!! Tonight we're having grilled chicken mixed with quinoa pasta, carrots and peas all with a parmesan sauce. I'll probably make some sauteed broccoli to go with it.

DS has a dr. appointment at 4:30, but if we're done there early enough, I'll make baked macaroni and cheese and sautéed Brussels sprouts.

We will be having SO's sister and family over for hot ham and rolls. We picked some up yesterday and had his mom and husband over for dinner, so just a repeat tonight. Chips and dip, pickles and cottage cheese. Apple Betty for dessert (courtesy of his mom).

We're having leftover Lumberjack casserole and biscuits... maybe some broccoli to go with. Hopefully its overnight stay in the freezer didn't screw up the potatoes!

We just finished dinner, and today we had pitabread with chicken (and tomatoes, cucumber, avocado and peppers). And icecream for dessert.

mmm, Chipotle sounds good. We just got one in the next town (yay, no bridge involved) so maybe I'll head over there. I haven't checked it out yet.
The 7yo has a dentist appt after school and then tae kwon do, so unless I cook something this morning, there won't be much time after, anyway.

Tonight is DH's turn to cook dinner, but we got to work very late this morning (stopped at county courthouse to renew license plate), so we'll be staying late. He made noise about "fast food." I'm hoping he means "Newk's."
I'm having leftover chicken spaghetti for lunch, though! Yum!

I love how I'm sitting here w/my bowl of Cheerios and our overseas Peas are having dinner. Cracks me up. Tonite is up in the air. Younger one has Court of Honor tonite which always throws a wrench in our dinner plans since we have to be there at 6:30, which is when I am usually cooking. <sigh> This means we either eat really early (for us) or really late. The original plan was stromboli, but I forgot the frozen bread dough and didn't realize it til last nite, so it's too late for it to defrost, even if I picked some up today. Asked older son to bring home some pizza dough from work last nite, but that didn't happen. <sigh> So I have to see what I have that I can throw together or it's takeout at 9:00 on our way home (which would of course be my preference, lol). We're grilling burgers. I'll make some of DH's favorite pasta salad - the secret is the Salad Supreme seasoning blend!
I'll make enough burgers to have some for lunch tomorrow, too. If DS doesn't eat them all first.

I'm trying to use up stuff from the freezer, so we're having Stuffing Crusted Turkey Pie. I'll also serve sweet potatoes, roasted brussels sprouts or asparagus, fresh pineapple, rolls, and an assortment of cookies for dessert.

My DH has been HOT to make chicken and waffles. The chicken has been marinating in buttermilk since last night and I will make the waffle batter and let it set this afternoon. Oh and collard greens to make sure we go all southern, lol.

I'm having a total lazy day ... pretty similar to every other day since I'm a SAHM ... see my post count I have a gel nail that has lifted so I have to go out to get that fixed so I might as well hit the grocery store after Yes, my life is so difficult Dh says he'll grill tonight (because I refuse since the thing terrifies me) ... So we are having grilled steak and salmon with a tossed salad of mixed greens, tomatoes, cucumbers, sweet peppers and green onions with a homemade vinaigrette dressing

I think I am actually going to make tacos tonight.
My dh is still gone on his last job. Last night for dinner I had a pop tart and my daughter had top Ramen. Yep, we are real health food nuts!

It is truly a 2 pea dinner thread miracle. I actually have dinner cooked. Not bought or planned, but cooked. I made white chicken chili last p.m. Except it is a bit runny, so I do need to add about three more cans of beans to it, but it was still tasty as I sampled it at midnight. Lisa

I haven't had to cook a meal for a week and am trying to figure out what food is in the house. I really don't feel like going shopping, so it will most likely be a spinach, sausage & potato frittata for dinner. The kids complained loud & long that DH only cooked 3 things last week (pork chops, pasta & salad), but I have to ease back in to my domestic responsibilities slowly and will make something more interesting tomorrow.

Finally, home from the hospital! DH was discharged at 3:00 this afternoon. The first thing he wanted to do when he got home was take a shower.
He has to stay on a soft food diet for a few more days, so he'll enjoy some grits tonight and I'm going to have a turkey sandwich.
We are both thrilled to be at home where we can finally get some much needed rest.
