Hi Vegan Peas,
So it's another week and how is everyone doing? I just got back from grocery shopping at Whole Foods and DH and I had dinner while we were there. Did you know they have a great dinner option (the Value Meal) or something like that, where you can choose a protein option from their deli and then any two sides to go with it. If you choose a vegan option it's only $10.00. This applies to any meal, but DH and I like to eat here because we don't have a vegan or vegetarian restaurant in our town yet. Tonight I had the orange sesame toasted tofu with potatoes and asparagus. The tofu had a orange sauce over the tofu that was really delicious. I wish I could get the recipe (but I know it's a closely guarded secret). Maybe I can try to figure it out on my own.
I'm still fighting this horrid sinus infection so I'm pretty tired right now so I'm keeping this short tonight. I hope all of you are doing well. Have you tried any new recipes lately? Discovered any new foods or books?

1/3 cup honey 3 TBS each of tamari and finely chopped ginger 2 TBS each of sesame oil and rice vinegar 2 TBS finely chopped garlic or garlic paste 1 tsp ground red pepper flakes 1/2 cup orange marmalade
Place all in sauce pan and bring to a soft boil, then simmer to keep hot. While that is cooking, take 14 oz of firm tofu and press between heavy cutting board (wrap in paper towels) for about 20- minutes. Then cut into 3/4" cubes.
Toss tofu with cornstarch or flour to coat.
In a large skillet, heat a few tablespoons of canola oil and fry the tofu until golden brown. Remove from pan and set aside.
You can steam or stir fry veggies (or use a frozen mix with snap peas) whatever veggies you like.
You can also serve over rice.
Once veggies are done, tofu fried, sauce simmered--toss tofu and some sauce on plate, add veggies and sprinkle with sesame seeds (we toast ours) and some thinly sliced green onion.
The recipe is super close to theirs, ingredients are the same!

Well I'm a little upset. I got my labs done in deck and my cholesterol was a dangerous 306. I went totally vegan on January 1st. I got my labs done the beginning of April after three full months of eating vegan and my cholesterol dropped 70 points to 236. I was ecstatic and very proud of myself. A few days ago my doctor's nurse called and said, "The doctor said your cholesterol went down a little but it's still too high so she wants you to go on meds."
My happy bubble burst and I said, "Yeah, ok." I said I'd take the meds to avoid an argument with my doctor but I am NOT going to. I think it's bullshit that doctors would rather push (harmful in my opinion) drugs rather than encourage a patient to keep up the good work and progress. In my opinion 70 points isn't a little bit!
I'm going to keep eating healthy and see what happens. It's only been three months and I have only half as much to go than I've already accomplished to get into normal range. Ugh.
What astounds me is that she gives me pushback on my pain meds that I actually need to have any sort of quality life, yet she's so quick to put me on statins. Grrrr. I'm looking for a new doctor not just because of this but due to some comments she's been making to me the last few appointments.
Anyway, trying not to be upset but rather continue on my vegan diet life, which I love. I just needed to vent.

You've done an incredible, amazing job going down 70 points in 3 short months and he/she still wants you to go on statins like it's no big deal-handing out those dangerous drugs like they are the answer to everything. I completely agree with you. I would not go on the statins either. In another 3 months if you keep going the way you have been you could be down another 70 points to 166! What you've done is working obviously, incredibly well. This food, this whole foods, plant based diet is the answer. Just look at your blood work results and how differently you feel now. I think looking for a new doctor is the best idea. I'm know you're not in a large city, but I think a Integrative Medicine doctor would be perfect for you if you can find one. They combine the best of traditional medicine and holistic approaches are are usually much more open minded. Mine spends a lot more time with his patients, but I do pay for that. Because he is in such demand he doesn't take any insurance and I have to pay out of pocket to see him. But he is the one who discovered my MTHFR genetic defect that cured my depression and he's the one who is treating me for adrenal insufficiency which most doctors says doesn't even exist. I also have an amazing GP who I travel 40 minutes each way to see-he is that good. He's on my plan, but I'm willing to travel that far because he's also open minded and will listen to me and answer my questions. He thinks this diet is fantastic and when I told him about it the first time he told me about that doctor he knew 25 years ago who was at Johns Hopkins and wrote that paper about Milk and dairy products being bad for people and how he never forgot about that paper. It might take a while to find a good doctor, but once you do it is well worth the time and energy spent. Ask around and search the internet-they have sites now that have reviews on doctors. I found my GP because I used to go to him over 12 years ago and remembered him from that time-before he moved so far away. Good luck to you and don't let the naysayers get you down. I don't blame you for saying no to statins. They have such serious side effects and why take them when you can get your cholesterol lower by continuing this style of eating, especially since you've done such an extraordinary job so far? 70 points is incredible! I've never heard of anyone getting their cholesterol that much lower! Good for you!!! Debbie in MD.

Hi y'all. I just found out that there is a new app for Oh She Glows. I just bought it. It says it has in app purchases but they are free. It has filters that you can set for the types of recipes that you want to see, like breakfast, lunch, dinner, etc and budget recipes and quick and easy. There are more filters, I'm just not listing all of them. This will be great to use at the store!
