Anyone want to share a link, pin or just their menu? I am trying to carve out more time in the evening and this seems to be the ticket. If I can get organized

I haven't dine once a month, but did do a few 2 week periods. For us it was too many casseroles and ended up being monotonous.
What we ended up doing is a mix of pre-made crockpot freezer bags, casseroles, and "fresh" dinners at least twice a week. We look at what our evening schedules are based on kid activities and go from there.
If you look on Pinterest, there are bloggers that do week menus at a time and include shopping lists. That was very helpful to me in planning my meals.

I have not done once a month cooking but I have been making the mason jar salads for DH's and my lunches. I put them together on Sunday for the week and we have been really happy with them. Yes, they do stay fresh all week!

I have found Pinterest to have lots of great ideas. I haven't tried it for years, but do remember loving having it done. I think I made 14 meals for a month and it was plenty with leftovers and eating out once a week.

We also do salads at the beginning of the week, save for the dressing. I don't use mason jars but glass Pyrex 4C bowls. We do put a small paper towel in with it, works perfectly!
I have done the bulk cooking before and really liked the food because I love casseroles and pastas. Unfortunately, we are trying to work our way to Paleo to help with my inflammation and I can't find a whole lot geared towards that kind of menu.
We do try to bulk brown our lean hamburger meat and put it in individual portions. When my husband juices or makes smoothies that is easy to freeze individual mixes in ziplock bags. He just takes one out the night before and puts it in the fridge. It looks yucky the next morning, especially the bananas and kale, but he says it tastes just fine. And all of the prep work can be done at one time.
Every little bit helps during the week and it takes way less prep and clean time.

When my sons were in high school I started doing a "cooking day" about once every couple months. It worked really well, especially when we were all super busy. I used the book The Freezer Cooking Manual by Tara Wohlenhaus and Nanci Slagle. They shared tons of tips and recipes. I still use the Teriyaki Chicken Marinade for Stir-Fry from that book as well as a granola bar recipe that everyone loves.

I like the book Fix, Freeze, Feast. It's my favorite. The recipes were good and very easy to prepare. I've also used the book The Freezer Cooking Manual. There is www.onceamonthmeals.com also, but I didn't care for those recipes as much.
