granola bars. I'd find one of those super unhealthy recipes with sweetened condensed milk and uses already prepared granola.

Nope!
It is for speech class. He has to show someone how to make something - he has to bring in the finished product and then teach someone else to make it. Doesn't have to be food, that just seemed simplest.
Oh, and class is approximately 45 minutes long, so nothing that needs to set up in the fridge.
16 school days left for this kid and we can't wait!! (he is a senior)

What about a trifle with brownies, whipped cream, butterscotch chips, and vanilla wafers? You could freeze the whipped cream so it would still be cold when he needed to use it. Depending on the time, he could cut them as part of the demonstration, or have them cut and ready to go.

Buy him a ball of rope and cut enough pieces for everyone in the class. He can then teach them how to tie 2-3 different knots. When I taught speech, that was one of the more successful "teach how to do something" speeches. The class liked participating. It is also a little easier to hold up rope to demonstrate than paper folding.

This is easy.
Peanut Butter Balls 1 cup peanut butter 1 cup corn syrup 1 1/4 cup powdered sugar 1 1/4 cup powdered milk
Mix together the ingredients. Roll into 2" balls and eat.

Eton Mess. linkYou can get meringues at the store and cut them into small pieces in advance. Also, whip the cream and cut the strawberries ahead of time. Super easy.

Flour tortilla, cream cheese (at room temp), powdered sugar, cherry pie pilling (or other flavor)
Mix about 1/4 cup of powdered sugar into the cream cheese, a tsp of vanilla, and spread over a few large soft flour tortillas, then spread the fruit filling almost to the edge of the cream cheese. Roll up like a burrito, nice and tight and the cut into smaller pieces. Don't over stuff--these should be appetizer sized-2-3 bites per piece.
You could do the same thing with tortillas, peanut butter, bananas, mini chocolate chips, and granola.
