I'm still contemplating dinner. It was going to be chicken enchiladas, but I ended up w/a late appointment and might just make it a leftovers or taco night. Decisions. Decisions.

Super easy leftover night Neighborhood yard sale is on Saturday and I would like to clear some stuff out, so I don't feel like cooking tonight and we have a bunch of leftovers to eat (salmon, edamame, roast beef, mashed potatoes, salad, beans, Mac and cheese). Which is why we also call leftover night "Night of 1,000 choices," lol.

We all know how picky my family is ... so I'm doing the "bad Mum" thing and cooking two dinners Dh and I will be eating leftover chicken piccata with noodles and tossed salad ... Picky#1 and Picky#2 will eat chicken tortellini in a red sauce ... Yup, I'm a doormat

We had baseball practice last night so dinner was sandwiches and fruit. It was cold, crazy windy and thundering. Ugh! Rain started when practice ended, thankfully! More rain in the forecast for today. So with that said... Tonight we're having spaghetti and meatballs, garlic bread and roasted veggies

I just took out a pound of ground beef, but no idea what (if anything) I'm going to do with it. I think I'm on my own tonight, so maybe nothing. Maybe I'll just have a tuna sandwich or something. ETA newlywoods03 -- hopefully some of that rain will make it down our way, too!

I'm up in the air too. Today was supposed to be Tonkatsu, but I just don't feel like an involved day in the kitchen. I'm cleaning a corner of a walk-in closet. Anybody want any 20 year old GI Joes?
Hmm, there's still some leftover pot roast. Maybe with a baked potato and vegetable? We also have strata, but DH seemed ambivalent about it, so I guess that's my lunch.

Still rainy and a bit chilly here so we will shortly be having beef stew and dumplings, mashed potatoes and veg followed by ice cream, peaches and blueberries for dessert.

Salmon (baked with lemon and spices) and couscous (and as always, I added lentils, cashews, sweet corn and sesame seeds) and a salad. And blueberries (handpicked by yours truly while battling mosquitos and snakes in the forest) with whipped cream for dessert. And DD, being 9 yo, added some sparkly sprinkles!

Super easy and processed today! Spaghetti (newman's own sauce that I will add ground turkey too), garlic bread (boxed, frozen), and a bag of microwavable frozen green beans.

I've been in a good mood all day because I knew before I got out of bed that tonight's dinner was going to be leftover stuffing crusted turkey pie from the other night. None of the sides are left so I'll have to cook some vegetables, etc. but not having to think about the main dish was enough to thrill me. Sometimes in life, it's the little things that make us happy.

Life is back to normal. My folks left late last night (they should have just landed at Heathrow). Thankfully we have a night with no baseball practices and games. As for dinner, I've absolutely no clue. There's leftover rice in the fridge, I didn't get any meat or fish out of the freezer so maybe I'll make some kind of bean curry.

DD is going out tonight so it's just the dh and me. He found 2 individual homemade pot pies in the freezer from my huge cook for the freezer day last year. We'll be having those and maybe a salad. It's rainy here today, I don't enjoy cold things on days like today. I made these in the smallest disposable bread pans, so they are quite hearty and don't really need anything else. Maybe I'll bake some cookies.

The boys' dad called a bit ago. He is bringing over some ribs. Yippee! I ended up grabbing the boys Burger King last night because it was busy at my house. The boys had a random day off school. So we had a couple of extra kids over, which involved running one home. In the midst of it all, I was trying to work while listening to teens jabber about video games, drink Dr. Pepper and eat donuts. But I wouldn't trade it for the world. Lisa

It was sandwiches - Spam for DH and pimento cheese for me and they were dressed (lettuce & tomatoes). We have the plumbers here FINISHING up the jobs that have been going on since Monday. DH and I are weary with all this mess. Glad to see it coming to an end but dread the bill that will be coming tomorrow. I need prayers and positive thoughts for that bill !!!!!

I have class till 9 tonight. So like most Thursday's it is leftover night. Our selections this evening will be half a pork chop, ham and cheese scrambled eggs, bacon cauliflower salad, caprese salad, and spinach artichoke pasta. Lol. Thursday's are always interesting. This may be why there's usually alcohol with dinner on Thursdays. Hahahaha

We had a doctor's appointment this afternoon so dinner is going to be take out... Chik Fil A chicken strips, waffle fries, and salad for me; I think DH is getting nuggets, salad, and we'll share the fries. (This after the doc told me to watch my fat intake... oops! Next week!)

Ate an early and very small supper at a restaurant with a young friend of mine. I really was not hungry so I took home large leftovers and dh will have those. I might make some oatmeal with brown sugar and chopped walnuts. I think I also have a banana to cut up!

I had 6 hospital visits to make this afternoon so I was afraid traffic would make me late getting home so I took green chicken chili out of the freezer and made cornbread. Yum.
My mother thinks it's hilarious that I call it green chicken chili. It's white chicken chili with a can of chopped green chilies added = green chicken chili.
