Having 8 people over from our congregation tomorrow. One of them can have no garlic, no onions and must have only soft foods. The rest of us are having salad, steak and an eggplant casserole I am making (which I will make garlic/onion free in the hopes it will be soft enough for said person to also eat).
What would be side dish that would go with the steak and tomatoey eggplant dish AND be soft? Would mashed sweet potatoes work? I have another guest who doesn't eat potatoes and avoids dairy, but I thought I could maybe mash sweet potatoes with a bit of coconut milk and coconut oil? Is there an herb that would complement that? I don't want to add any honey or sugar or maple syrup to the potatoes or any other dish.
Any ideas for me, or thoughts on my idea above? Thanks!

I love baked or mashed sweet potatoes. I just add salt and pepper, but I think a pinch of nutmeg would be good. Or maybe rosemary instead. I think rosemary makes everything taste better.
I also like pureed vegetables -- peas or turnips or carrots are all good. Eggplant tends to be pretty soft -- I bet you're fine with that one.

I think that mashed sweet potatoes would be great. The other idea that is very trendy right now is mashed cauliflower- there are lots of recipes out there for it.
If you want anything else - a thick cream of fresh asparagus soup, using coconut milk instead of dairy would be tasty and filling. It could be a first course.

Mashed sweet potatoes were my thought as well. My mil has a recipe that has a bit of lemon and a hint of bourbon, you might be able to find something like that with Google.

I'm going to mash Yukon gold potatoes with sour cream and cream cheese, top them with buttered bread crumbs and bake in casserole dish. A family favorite. I'm also going to make mashed sweet potatoes, adding some butter and fresh rosemary I just picked up at the store. Loved that suggestion, and all of your other ideas too. thanks everyone!
