I'm trying to menu plan for this week, but I'm stuck. Anyone want to share their weekly plan to provide inspiration?

We have a super busy week, so it's a simple plan.
Sun - Sloppy joes and oven fries Mon - cheese tortellini with fresh grape tomatoes and basil, salad Tues - bean burrito bowls Wed - pizza panini, broccoli slaw Thursday - omelettes and fruit Friday - dinner out
Planning leftover sloppy joes, chicken salad sandwiches and chef salads for lunches over the course of the week.
On my way to the grocery store now!

I'm trying to figure it out now! DS is having his wisdom teeth out tomorrow, so I think there will be lots of mushy stuff on the menu. It's school vacation week and we're hanging around.

This will provide NO inspiration due to a week with 6 baseball games and 5 softball games, but.. Sunday- grilled pork chops, some kind of noodles, cor Monday- bacon cheeseburgers and some purchased pasta or potato salads Tuesday-grilled Italian Sausages with peppers and onions, along with the aforementioned salads. I will also do prep work for tacos/nachos Wednesday- tacos/nachos. Thursday- this might is too crazy to attempt a plan, so dh will eat before softball and ds and I will eat after baseball. Friday- probably give in and order a pizza or some Thai food. Saturday- tournament day, so it depends on when it ends.

I am working on the menu and grocery list as well. This is what I have so far:
-Sunday --pork chops, sweet potatoes, broccoli -Monday--tacos (I work late so will probably make the meat tonight so it is ready for everyone tomorrow when they want to eat)
I want to make a Mexican red lentil soup as well but not sure when and if the kids will eat it. Also might make some meatballs that are packed with veggies to have for lunches.
ETA that I have a few other ideas as well (Asian lettuce wraps and crock pot stuffed peppers) but again, not sure the kids will eat that and I don't want to have too many dinners in one week that they will complain about. They like egg roll in a bowl so that might make an appearance.

I'm single. Do any single folks menu plan?
I like the idea of it, but am not sure I'd actually stick to it.

Glad to see we are not the only ones so busy it's hard to plan. My boys have baseball pretty much every night. It usually only leaves me about an hour to cook. They don't like to eat too close to game time either, so sometimes even less than that. So far I have
Sunday: chicken spaghetti, salad Monday: cheese ravioli, salad, crusty bread Tuesday: whole chicken in crockpot with carrots and potatoes Wednesday: out to dinner or pizza
Still need a few more

Sat - easy cottage pie, mandarin oranges, leftover old-fashioned green beans (my middle child cooked) Sun - main dish salad, breadsticks, peaches Mon - sweet and sour chicken, rice, broccoli, pineapple Tues - frozen pizza (DH and I have a fundraiser dinner so it's just my girls eating) Wed - taquitos, refried beans, corn, fruit of some sort Thurs - hotdogs, tator tots, applesauce (my youngest will cook) Fri - grilled cheese, tomato soup
Nothing terribly exciting this week....
generally I aim for one salad night, one meatless night (Fri), one night each where the girls choose and cook, one chicken night, one mince (ground meat) night, and one more complex meal (usually Sunday - but we're out all afternoon today) - sometimes those overlap a litle and some weeks I throw in a leftovers meal if the fridge is over-full
@peasville - it's been 25 years since I was single/no kids but yes, I menu planned - I didn't always assign (and don't now either sometimes) meals to specific days but I would plan for 5 or 6 dinners/week - figuring leftovers or eating out for the others - and when I made stuff that was too much for a meal for one (roast chicken for instance - I would plan meals to use the extras so I might have roast chicken on the wknd and then plan chicken curry and chicken pot pie and chicken noodle soup during the week - all of which the leftovers freeze nicely for another meal another week)

I may try it. I am lazy so I often make something quick or just pick up take out. It would definitely be healthier to cook at home...

I'm single. Do any single folks menu plan? I like the idea of it, but am not sure I'd actually stick to it. I'm single and I do a sort of loose menu plan. I find if I menu plan I know in the morning what I need to take out of the freezer for dinner or if I need to pick up an ingredient, etc. Knowing what I'm having and what I have to do to make it before I leave for work keeps me from hitting a drive through on my way home. So I save money and eat healthier. Plus I generally make 2 or 3 servings so I wind up with leftovers for lunches.

I'm single. Do any single folks menu plan? I like the idea of it, but am not sure I'd actually stick to it. In Ontario, there is a great little frozen food store called "M&M". They have an excellent selection of pre-portioned and single portion meals and in a wonderful variety of everything. I can buy single meal portions of cabbage rolls, chicken, beef, fish portions. The stores are small and the turnover of the food is quick & always fresh. I usually add rice or a salad & dinner is done, tasty & no leftovers.

I kind of do..otherwise I eat like crap when I don't take stuff out of the freezer etc. Tomorrow night I am doing a stir fry and then leftovers will be for lunch the next day. Tuesday night will be grilled chicken and something for a side...Wednesday I have a dinner meeting...no clue the other nights.

I don't really menu-plan, but I do usually have sort of a vague idea what I'll be cooking/serving this week. I'm single, but I have my grandson here about half the time, and he has activities right at dinner time four nights a week. So it's complicated. So I will pick up a rotisserie chicken at Costco tomorrow (maybe two) and use it for sliced meat when it's fresh, then fried rice, chicken noodle soup, chicken curry, whatever works with my schedule as it rolls out this week. I will probably make cheap Korean beef sometime this week, too ... it's super quick and easy, made with ground beef, and the boy loves it. I also like to make quiche or frittata type things with whatever meat, veggies, and cheese are lying around, but that needs to bake for a bit after throwing it together. But on the plus side, I can make it before we go out, and eat at room temp when we get back. If all else fails, I can always fill in with something from the freezer or pantry as needed. He likes BBQ-flavor baked beans.

Yesterday I made mustard glazed chicken. Tonight is taco lasagna. Tomorrow is shredded chicken in the crockpot (it's usually a turkey recipe, I hope the chicken works.) Tuesday is cheeseburger soup. Wednesday is going to be tortellini alfredo. Thursday will be a $6 pizza from the grocery store deli.

I am single and sort of menu plan. Last week was healthy buffalo chicken bowls, broccoli salad and grilled burgers. This week I am making a partial batch of the Garlic Chicken Farfelle ( It's the peas fault! Lol ) and Chili because it is cold and snowy in Colorado this weekend. For breakfasts I have cereal, some light breakfast bowls and stuff for smoothies. Lunch is salad or dinner left overs.

iamkristinl16I can't figure out how to link the recipe from my phone. It's on skinnytaste.com and is called "ASIAN LETTUCE WRAP CHICKEN CHOPPED SALAD". It works with ground turkey or chicken. I've made just the filling and put in lettuce also. I make rice for my kids and they eat the meat over rice and salad on the side (well my non-picky child does). I like this recipe compared to some others I've seen because it has no added sugar and no mushrooms.
