I just made this for lunch and DH and I were amazed by how delicious every bite was. I also added about 2 tablespoons of grated cheddar on top.
So easy and so yummy! It has avocado, eggs and bacon - you really don't need anything else, do you?

Yes, but I will admit to something childishly delightful in being able to scoop the egg and avocado out with a spoon. Kind of like eating a bowl of pudding or jello. Or soft-boiled eggs in an egg cup, having an avocado being the cup in this case. I will also admit to repeatedly taking my life in my hands by eating runny egg yolks whenever possible. I usually pass up on scrambled eggs, but could easily eat 1/2 dozen sunny-side up or over- easy eggs at one sitting. Hot liquid egg yolk is heaven!

This sounds heavenly! And I agree that having the yolk soft makes all the difference in taste for me too. I suppose if you made an over-easy egg and served it on top of sliced avocado and crumbled bacon it would be a close second to the above recipe, but I like the idea of having it in the avocado shell and it doesn't sound overly difficult and fussy to do. I haven't eaten yet today, and I want this! Unfortunately, I don't have any bacon or avocado in the house.

I don't like the thought of hot avocado. I do fry an egg and plop the fried egg in the seed hole and crumble bacon over it. It is very tasty. I like the no dish clean up other than the spoon I used to eat it with and a small skillet to wipe out.

I didn't think that I'd like hot avocado either - DH and I actually talked about that very thing while eating them - but it was really surprisingly good. I could see where it wouldn't be good if the avocado wasn't quite ripe - I hate underripe avocado - but mine was ripe all the way through and it was hot creamy goodness.

This sounds delicious. I've seen cooked avocados mentioned in the "what's for dinner?" Thread and have wondered if it changes the taste/texture. I love avocados! I have eaten omelets with chopped avocado inside and the warm avocado is a bit different. It has a little bit different taste, but still distinctively avocado flavor. And it really isn't cooked as much as warmed. It doesn't alter the texture that much, just a little creamier. Oh why wasn't I born wealthy enough to have a full-time staff at my disposal? I want to be able to, I guess in today's technology, maybe text downstairs to the kitchen to have this sent up to my room where I am still sitting in bed, not feeling very well today. My reality is that if I don't get off my butt and get to the grocery store soon, I'll have to start developing a taste for either dog or cat food, because my people food cupboard is getting pretty darned bare.

We have a new toast restaurant that makes scrambled eggs with smashed avocado and fontina on toast and I confess to fantasizing about it at random times. The texture and taste of the warmed avocado is perfect IMO.
This recipe sounds great, thanks for sharing!

Sounds divine! I'd cut a small sliver off the bottom of each half to get a flat base so the avocado doesn't roll and give these a try for lunch this week.

I saw someone making something similar (not sure about the bacon) on tv the other day and they cut a little piece off the bottom of the avocado that it wouldn't tip. I thought that was genius.

Now that I have to eat dairy free, when I crave ice cream I sometimes throw half an avocado and a cup of unsweetened vanilla almond or coconut milk in the vitamin and whip it until it's nice and creamy -- soon good!!!

I would not have imagined that warm avocado would be so yummy, but IT IS! I could eat this for any meal. I love avocado, especially as part of a breakfast dish with eggs, but I just cannot eat warm avocado.

One of my favorite local places has Grilled Avocados on them menu. They grill avocados and top with your choice of fajita meat, queso, and sprinkle of cilantro. Yummy!

I may have to try it again. Maybe it'll grow on me. Sometimes the first way I try something I like is hard to overcome another way. Maybe I didn't ad bacon... that might help.

Maybe I didn't ad bacon... that might help. What a disappointment! IMO, the bacon is a crucial part of the recipe - I made sure to have at least one piece per bite. I emailed the recipe to my mom, who is notorious for leaving things out of recipes that I send her and then not liking the finished result, and told her that she had to use all three items - avocado, egg and bacon. Hopefully, she will listen this time!
