What do you serve when you have very little time to prepare dinner?
This summer I've started working out for the first time ever. I hope to keep it up once the school year starts. My class is from 4:30 to 5:30, which means I will be going straight from school to workout. I should get home shortly after 5:30. The problem is both my boys have sports commitments that will start anywhere from 6 to 6:30 most nights.
Any suggestions? I've thought of crock pot meals, but it needs to be healthy and many I've found have tons of cream of whatever soup, etc.

Are you home during the day before your class or are you on campus? I ask because you could either prep dinner and then cook when you get home or actually cook it and then just reheat when ready.
For quick meals I do mixed green salad and pasta, ground turkey black bean tostadas, breakfast dinner (omlets with veggies and ham), fruit, and breakfast potatoes, french veggie soup, chicken tortilla soup, ground turkey burgers protien style (aka in lettuce) with fruit and veggie, fish (halibut, cod, mahi mahi) with veggie and fruit.

I will leave the house at 7:00 and not return until 5:30. If I don't have too much work to do after school, I could run home before work out for 30-45 minutes and prep some things though. Planning will get you a long way! Make lists and have the ingredients ready. Maybe make things in the evening if you can. My kids favorite fast food is tomato soup. 1. 1 can tomata passata (no idea what you call it in US. Tomato sauce maybe?). 2. Fill the can twice with broth. I use organic vegetable broth with no nasties. 3. Whatever spices you like. Oregano is the classic, and worchesters.sauce is also great. 4. Boil That's the base. Jazz it up or serve as is with some decent bread

Quick key ingredient I keep in the freezer is grilled chicken strips. You could get 2 meals out of those that are super quick. They take 8 minutes to warm up in the pan. I make grilled chicken salad wraps or pittas with them. I also make chicken fajitas by buying frozen pepper and onion strips , tortillas and fajita seasoning. Total time 15 minutes. Do the pepper strips in a seperate pan with the seasoning since the strips throw off water.

Another idea is to prep freezer meals that go into the crock pot. Or when its cooler, prep soups on the weekend and freeze for the week

There was a thread earlier today about prepping food that you might find helpful. Lots of great tips there. Here's a meal planning service that I found helpful a couple of years ago when I was super busy. You do the prep work on the weekends, then most of the meals come together very quickly on the night you prepare them. I subscribed to the clean eating version, and the recipes were simple and good.

She has really good recipes, and we have only ever had one that we didn't care for. Many quick go-to meals, and crockpot stuff too. (Her chicken tortilla soup is to die for!) It's $5 a month, and she is extremely religious. I am not. But I can look past that and just get to the good stuff.
