Okay, so it technically isn't June yet, but close enough... And, it is that time of year - time for summer canning to begin.
Yesterday, on the way home from our retreat, we stopped at a U-pick strawberry place and picked 10 pounds of strawberries. I turned 5 pounds of strawberries in strawberry jam using my water bath canner last night. It made 2 pints and 5 1/2 pints. I use low sugar pectin because less sugar is better, I think. The kids have already gone through about half of the other 5 pound bucket, so no second batch this week. And I think the jam won't last long. My husband, who didn't want to stop to pick, kept saying "wow, this tastes so good!"
Hand-pick varieties of strawberries are just so much better than store brands because of the higher sugar content which makes them too unstable to sell in grocery stores - they really start deteriorating within hours of picking them. But, man, yummy jam!
What have you guys started canning? What are you planning to can this summer?

By this weekend I will be making cherry preserves, if I can beat the birds to the cherries on my tree. It is full!

Not canning, but like you, trying to take advantage of strawberry season and freezing them here at our house. I've managed two batches of whole berries and one little ol' jar of sugared berries. We're having a little difficulty finding good ones this year; our local pick-your-own has been closed and our local orchard berries weren't as up to par as normal. Unless we drive down to Butler's in Montgomery county, we may just have to deal with hit and miss berries. But then, peach and corn season is coming!

I am jealous of the strawberries! I would love to make strawberry jam.
I am looking forward to making hot and spicy pickles again this year. The pickling cucumbers wont be ready until August.

We went picking in Loudon County in VA - but that would be more of a drive than Montgomery Co. By this weekend I will be making cherry preserves, if I can beat the birds to the cherries on my tree. It is full! I love love love cherries! I would be in canning heaven! Too soon for me to even think about canning!!! I'm just getting my plants in the ground this week! Yes, tomatoes and pickles will be later this summer, but this is berry season here in VA. I missed out last year, so was diligent about being sure we got at least one picking session in.

Nothing ready this month, but grapefruit, oranges and kiwifruit are coming along nicely so next month will be kiwifruit and orange jam and kiwifruit chutney and August is the start of grapefruit marmalade. If I have a surplus of lemons I'll be making lemon curd and old fashioned lemon cordial as well.

Thinking about making strawberry jam but they aren't quite in season yet in NJ. We have a few more weeks to wait.
I made jam once at least 18 years ago and I think it was the hottest, most humid day that whole summer. Just haven't been able to bring myself to do it again since then, until this year.
Maybe I'll just stay away from the pick your own places until the urge passes.

If you have plenty of lemon you should try to make Crema de Limoncello it's so good and simple to make they are tons of recipes on Pinterest.

It's been so hot here this spring (Seattle area), that we're having an early strawberry season. I bought a half flat at the farmers market on Saturday, but we ate them all. My grandpa came over yesterday and brought me another half flat. I'm hoping to make some freezer jam before they're all gone this time. Not canning, but close.

Not canning per say, but I noticed my garlic scapes are up on some of the varieties I planted, so I will probably be making some pesto with them to freeze in the next few days.

Strawberries in the freezer for smoothies and angel food cake as well as strawberry freezer jam (with way too much sugar!). They were early this year and I almost missed them. Many were eaten fresh they were so good this year.
