Yes. The secret is to slice them super thin and heat the oil up to at least 375. (I use an electric mandolin slicer to slice them. Perfect every time and I don't lose any finger parts, lol.)

ETA:: You also want the oil to be at least 1/2" deep.

Yes, you season them right when they come out of the hot oil. This way whatever you use will stick to them.
I got decadent one time and made some and used melted butter and garlic. WOW, they were so good. Sooooooo very bad for you though.
