My son has requested stuffed mushrooms for part of his birthday dinner. ( I know, the kid's weird. ) I've looked around allrecipes.com and pinterest, but the problem is, I don't like mushrooms, so I don't know if a recipe sounds appetizing or not! What do YOU like mushrooms stuffed with - cream cheese, other cheese, bacon, meat, what? It all just sounds blech to me, lol.
So, what's your favorite stuffed mushroom recipe?

My husband makes really great stuffed mushrooms. He uses the giant Portabello caps and fills them with a crab mixture. I think it's crab, cream cheese, some herbs, very finely minced onion/celery/bell pepper/whatever's-on-hand, a little parmesan cheese, and bread crumbs. Top with a dab of butter and bake. Finish with a few moments of broiling to crisp the tops. We usually have them with a nice mixed salad on the side.

But be careful, the first time I made them the recipe didn't tell me to take the tiny bits of shell out of the crab. Let's just say they were crunchy.

I use a stuffing of crumbled sausage, onion, thyme and a bit of breadcrumbs. Then top with a little Parmesan and bake.

And if you like sauce, google stuffed mushroom horseradish sauce to go with. It is basically sour cream, horseradish to your desired spiciness, a little tabasco, salt etc. It is good with stuffed mushrooms.

Hi Ladies! After posting this question, I got so busy with other stuff I forgot to come back, I'm so sorry! As it turned out, my son's girlfriend found a recipe that actually sounds a lot like what most of you suggested - crab, parmesean, etc. I'm not a big crab fan either ( my friend says I have the palate of a four year old, LOL!) but we went with it and they were a hit! We had a bit of the stuffing mixture left over, so we made a couple of crab cakes to use it up. I tried a bite and it was pretty tasty. I felt very grown up, enjoying a bite of crabcake. And worrywart, that sauce you described sounded delicious! I wonder what else that might work with, have you tried using it on other dishes?
