I have been working on today's meal since yesterday. Sweet tea brined pork chops, mashed potatoes, marinated asparagus, Southern Living's BLT Salad, and grilled super-ripe pineapple spears and super-ripe peach halves. YUM. Actually, to be perfectly honest, I messed up the asparagus, which I haven't made in at least a year. I steamed the asparagus too long, and the marinade was under-seasoned. But everything else -- wow. Seriously, wow!!! Grilled fruit is divine. I saved my grilled peach and put it over vanilla ice cream for dessert. YUM! Oh, yes, and this was what DH wanted, so he's happy, too. But dang, I can't wait to get back to work so I can take it easy! (P.S. -- I didn't make the buttery croutons for the salad. I didn't have any white bread.)

It's not Father's Day here either (it's in September) which is just as well because both my dad and my FIL are overseas at the moment (oh it must be tough to be retired!).
My BIL cooked dinner for us. We had roast lamb, roast pork, gravy, mint jelly, green beans, cauliflower and broccoli in white sauce, and roast veggies: potatoes, pumpkin, carrot, onions and garlic. Magnificent!

I made spaghetti with meat sauce, garlic bread, and a new salad that I made up inspired by one we had in Italy recently: Chopped: Celery Red pepper Cucumber Baby Romaine Mozzarella Pearls Fresh basil Dressed with a simple balsamic vinaigrette. It was so good!!
