Last night we had gyoza and rice. Tonight I'll make the chicken tortilla soup that I was going to make last night. My morning started out w/two cats leaping on and off of my bed, chasing eachother. Hopefully, the rest of the day is calmer. I am not a fan of furry alarm clocks.

Roast pork and black beans on rice with a cucumber, tomato, and red onion salad. I am so glad for summer vegetables and herbs to be coming in! I'm seriously considering adding corn on the cob to the menu, although it's a little redundant to have that much starch with the rice part of the main entree.
DH made ice cream Sunday, and we're still making our way through that. Yummmmmm!

Dh is going camping this weekend ... I don't camp ... ever. So it's just the dd's and me at home this weekend and I don't plan to do any cooking at all I'm thinking tonight will be Wendy's for the dd's and a burrito for me

I've been AWOL for the past week while my sister was here, but she's gone now and I'm baaaaack. I'm going to cook some rice this morning and let it get nice and cold so I can make chicken fried rice tonight for my baby (not) boy.

Thanks for asking after me. I was just posting at the same time as you. My sister was here for a week, we went away for the weekend, and she's been eating up all my time and attention. We ate a lot of Mexican, ice cream, and tea room food while she was here.

Trying a couple of new recipes, baked firecracker chicken, kohlrabi and zucchini fritters and either rice or baked fries. I'm already guessing that dh and the kids will turn up their noses at this menu. Sigh.

Roast lamb, roast potatoes, new potatoes, whatever veg I can find - I know there's cauli, broccoli, corn and frozen peas so some or all of them! - mint sauce and gravy. Fresh strawberries and cream for dessert. It's our wedding anniversary. 43 years! I'd like to say it's a special meal for that but it's not. I found the lamb lurking in the depths of the freezer and thought I'd better use it before it resembled something buried in the ice age.

So tired. First three days of this week I spent in the car, traveling across the state for work -- about 1,000 miles. On the bright side, my beloved finished up roast beef leftovers, and converted some aging rice into "doggie gravy" for the pooch. Still have leftover chicken, brats and sauerkraut to eat before the weekend. I am going to make greek salad tonight -- after three days of poor eating, I am craving veggies. Will probably have that with some cold chicken, as it should be in the high nineties by dinner time.

It will just be DS and I tonight, and I'm thinking of doing something a little special for him, because of something that he's having a difficult time with right now. So, I'm either going to make baked mac and cheese (one of his all time faves), or else we'll go and take care of a return at the store, and then stop for Subway (another fave) on the way home.

We have eaten out so much lately because of DH's birthday celebration and then going out for dinner for our anniversary Tuesday, that last night we didn't even have dinner....I ate microwave popcorn and DH ate leftovers from our dining out.
Tonight, it's just pasta, a salad and some garlic bread.

A blt with avocado fried rice greek salad
I need to make a real dinner tonight because I have been seriously slacking! The other night I picked up these premade pinwheels from the butcher. It's flank steak rolled with spinach and blue cheese. I grilled those and that is all I served! In my defense it did have spinach in it that I count as the vege of the meal!
I am really leaning towards the greek salad, that sounds really good. I will also need to make some kind of meat because if there is not meat that is not really a meal (says the husband)

Welcome back lucyg, you were missed. I'm making some spanish rice and fajitas. DH's will be regular cheese and mine will be veggie. I like mushrooms, onions, spinach and cheese in mine. It's pretty toasty here, so this will be an easy stove top meal.

I have no idea. None at all. I just took some ground turkey out of the freezer, but beyond that I just don't know. It is already cooked, all I have to do is add it to something. Some days it is just too much trouble to cook for just myself. I swear, I almost rather not eat than expend the energy.

I pulled out some chicken, but I honestly have no idea what I will do with it. I might put it in the crock pot with some kind of sauce or I might just boil and shred it. On second thought, Option B sounds like too much work so never mind. Lol. Crock pot chicken it is. Specifics TBD. Lisa

Dh has tummy issues so my guacamole tostadas will wait until tomorrow. I think we'll have French toast - breakfast for supper. I have cooked bacon in the freezer, if I can find it.

A taco salad: seasoned ground beef, two kinds of shredded cheese, refried beans, black beans, red onions, avocado, tomatoes, shredded lettuce, sour cream, salsa and crushed Doritos.
I have a rush wedding invitation order to address 150 invites in calligraphy, and dd is in the middle of six 12 hour nights at the hospital. Supper is throw together what you want, when you want!

Here is my Greek Salad recipe 2 or 3 English cucumbers, diced One to 1 1/2 containers of grape or cherry tomatoes 1/2 cup diced red onion ... or more if you like onion like me Dressing: 1/4 cup extra virgin olive oil 1 1/2 Tbsp white wine vinegar 1 1/2 tsp dried oregano 1/2 tsp salt 1/2 tsp pepper Toss the veggies together and then add dressing ... top with crumbled feta cheese right before serving *** I also like to add quinoa or couscous to this to make it more of a meal than a side dish This makes a lot so be prepared to eat it for a couple of days

My recipe is similar to leannec's recipe, but I add chopped kalmata olives and a diced bell pepper, preferably yellow for color. I make a similar red wine vinaigrette.
