I always do, but I never see chefs on Top Chef or other shows do it. Is it just editing? I have a lot of shrimp to devein this morning...

I do, and I think all chefs do too - well, the apprentices or whoever is the lowest rank in the kitchen would do it. I'm sure by the time they get to filming for a TV show they have already been done by someone.

Yeah, deveining the shrimp is a must-do step. I can't imagine a professional chef would skip it? If so, remind me to not to eat at their place. It is not a fun step though-talk about tedious. And gross if you stop to think about it too much.

Yes! I just shelled and deveined a couple pounds of prawns last night. I think it would be totally gross not to. Some of them had intestinal tracks full of "stuff"....(bright orange stuff) :0

I don't think the shelled and deveined shrimp taste nearly as good -- do others?? They seem sort of soggy and mangled to me

I buy the shrimp that are already deveined and all you have to do is peel the shell off. Unless they are the itty bitty shrimps, I don't know how you would devein those! I don't usually care for the taste of the super small ones, I wonder if that has something to do with it.

Always. I think most chefs do, even if they don't always show it. I've seen some chefs not do it, or not do it well, due to time constraints. The judges always call them out on it when it happens though.

I only buy fresh (never frozen) wild-caught shrimp still in the shell, and those don't come pre-deveined around here. So yes, I devein them. Did a bunch just yesterday.
What I don't know is how to devein them without removing the shell. Or are peel-and-eat shrimp in a restaurant just not deveined? I never order them because I'm not sure.

I'm 99% sure there was a contestant on Top Chef that took the wrath of Tom for not deveining shrimp used in a dish. It was definitely edited as a mistake in the dish as the chef decided not to devein (or didn't know he should?). A quick google search didn't find it, but did come up with shelling & deveining shrimp was part of a Quickfire challenge in episode 12 of Season 9 (Texas). I haven't noticed a difference in taste between shrimp I buy deveined and ones I do myself. If I do them myself, by the time I'm to the end of the bowl, they can be looking pretty ragged and I'm wishing I'd bought deveined .

If I order peel and eat, I peel, do a quick devein and then eat. I have had them before where they are so fresh that the 'vein' is so gritty that you wouldn't want to eat it even if you didn't know what it was. I don't know what other people do though.

Definitely, always. Or I buy deveined from the store. I've eaten my share of steamed/spiced shrimp in restaurants that were unpeeled or deveined before I knew what that vein was. I haven't had restaurant-bought spiced shrimp in years! And when I do order other types of shrimp, I always look after the first bite - if it's there (and sometimes it is) I just can't eat it.

We just brought a cooler full of freshly caught shrimp home from a vacation in Florida. First thing we did at home was dump them in the sink to wash and devein them. Once packed in plastic containers full of water, we popped them in the freezer.
Deveining is an absolute necessity. I prefer to buy shrimp that have NOT been deveined already so that I can personally make sure it's done properly.
I assume that step is done in restaurants. But maybe that's one of those "assumptions" we make about restaurants doing things properly in order to eat there without freaking out.

Not anymore. I developed an allergy for crustaceans a few years back. pout. Luckily, other seafood doesn't bother me. (clams, mussels, scallops..) But back when I could eat, yes. Devein. If I buy now for everyone else, I buy deveined. Not gonna work at something I can't enjoy!
