I signed up for a loft box every other week - $35/week for a box of local, in season veggies. This week was a ton of peas (3 styles), kale, 2 lettuces, and these garlic scapes.
What can I do with the scapes?
ETA - so nobody else has to Google (sorry @oh yvonne) - garlic scapes are the parts of the garlic plant that grow above the ground apparently. Only in season a short time, and supposed to be yummy!

I have never ever heard the term 'garlic scrapes"...off to Google.

DH loves them sautéed with cabbage. I think they are supposed to be good for pesto.

I made pesto once but it was garlicky! Delicious but don't plan on talking to anyone for a few days :-P

Pesto is the number one suggestion, but they can also be used anywhere you'd use green onions.
Sautéed in kale or spinach sounds divine. I've fallen in love with Carraba's sautéed spinach and I bet these would take it up to a whole new level

It has to be something that can stand up to a strong flavor, so they would be good in a tomato salad, or a simple pasta dish, maybe sautéed mushrooms, scapes and some parmesan cheese.

I've had them stir fried. Really yummy. They had a similar tender/woody texture of an asparagus.

My dad grows his own garlic and there's a lot you can do with them. My mom will saute them with veggies or potatoes.

my sister made pesto with hers - she said she freezes it (in ice cube trays) for a few months and it's better then than fresh

This, plus I chop them really tiny and put them on cottage cheese and baked potatoes. I use them like green onions or chives. Yummy. I got a huge handful at the market last week for a buck. They last a long time not chopped in the fridge. SaveSave

I love, love, love garlic scapes. I cut them up and freeze them and throw into sautes, salads, etc.
