Only 2 people are eating at home tonight. I have no idea what I might make. Last night ended up being a leftover night, because only one person was home. I'll update this thread later when I figure it out. What's on your menu? Have a wonderful day everyone.

Dh has to meet a client at 5:30pm so he asked if we could eat late tonight ... so it looks like I have until 7:30pm to cook dinner Lemon Cream Pasta with Chicken is a fav of dd#1 but I found another recipe that resembles it that is easier so I'm going to give it a shot tonight ... Creamy Lemon ChickenDd#2 probably won't like it so she will be fending for herself

And I think I know what we will have for dinner tomorrow. dinner today was smoked pork chops, mixed veggies and homemade potato mash. And more strawberries for dessert (I made a large batch of strawberry jam yesterday, but saved some for dessert today).

I'm making a ham in the crockpot while I type. My husband is craving ham and bean soup. So this craving helped pick the meal.
Ham, mashed potatoes, corn on the cob. Dessert will be strawberries and pound cake.

I saw boneless pork out and will guess Dh will slowly bake it with bbq sauce. It gets very tender and he enjoys it that way. I have no idea what else will be served.

Last night I was given the most wonderful of gifts-my dad grilled out bbq chicken with my mom's homemade bbq sauce on Monday and they brought some to me yesterday. Here is where I add that if I was choosing my final meal-it would likely be my dad's bbq chicken with my mom's bbq sauce. So tonight I am having bbq chicken and a baked potato with a vegetable to be determined. I am so excited that I want to eat it now.

Meeting my dad for supper. He is hungry for BBQ ribs, so we're going to a new-to-us place that a friend recommended. Fortunately for me, Wednesday night is all you can eat shrimp. No cooking!

We're having leftovers of any food in the refrigerator cooler. Several odds and ends have accumulated in there and they won't last long because of the less than cold temperature. When I announced that tonight was leftover night, DS said it will be like a meal from around the globe. I have Italian, Chinese, American, etc. leftovers. That's the attitude, sweetie! We'll see if that's his attitude when he sits down to dinner tonight.

That is a great question - the dinners from the last 2 nights were supposed to generate enough leftovers for tonight. Well, they did - but only enough for DS, who has to eat at 2:00, because he is working at our town's fireworks/concert tonight. I will probably pick something up for DH and I on my way home - either BBQ Shack (not the name of it, but that's what we refer to it as and they have amazing food) or possibly Jersey Mike's, although DS would not be happy if I did that when he isn't home!
We are going to be super-fancy and DH is going to eat Totino's pizza rolls while I have Stouffer's mac and cheese. If I am feeling really ambitious, I might have some smoked sausage, too!

Tonight one of our dogs has a late vet appointment to follow-up from her foxtail surgery last week. I pulled out the last of the meatballs from the freezer, dh and boys will have them with pasta and I'll have mine with veggies which could be broccoli, cauliflower, kale or zucchini, all of which need to be eaten up before we leave for vacation on Saturday.

It's hotter than hell out there today. We were supposed to have sloppy joes, oven roasted potatoes, corn on the cob...but I think we're going to not do the potatoes (or do them on the grill) and the kids will have chips. It's too hot to fire up the oven.

I have some leftover cooked chicken breast from my salad yesterday. I think I'll take that and make some fried rice with it, add some frozen shrimp to pump it up. I have some veggies in the crisper that should be used up as well. So that's an easy dinner.

We're celebrating DD's birthday early because she and I will be heading to West Virginia tomorrow to visit my mom. Her birthday is actually Friday. She wants to go to her favorite Japanese restaurant for sushi, so that's our plan.
So you probably won't see me around the dinner threads for awhile. Never fear, I shall return in 2 weeks or so!

This is our first night since Sunday when we don't have company, so I'm doing as little as possible. There is a steak in the fridge; DH is off work today so he'll probably go for that. I'll graze off leftovers.

Lots of leftovers here. Ribs, quiche, chicken. The 7yo and I will pick through that stuff. It's not so hot here, so maybe I'll finally try the roasted cabbage slices (can't bring myself to call them "steaks") everyone was making last winter. ETA safe travels to @nicksmom !

It's National Fried Chicken today so I am making a Paleo Chick-fil-a batch of nuggets, roasted green beans and maybe a salad. I am in such a no cook funk it is unbelievable.

Just want to say Thank you to all the Peas for their kind words about my bad news day yesterday. I'm back to my normal self today - I'm one of those people that the glass is half full. Thanks again!
I cooked the meatloaf that I made yesterday and stuck in the fridge. I also made the mashed potatoes that we had today. The reason I am stressing "I made" is because DH is the cook/chef in this household. He did microwave some other veggies to go with our meal (like the sweet (English) peas - always have to have them with mashed potatoes.
I did good!

So, we were gone for a few days. Ate okay (camping for a few of those days) and caught some fish, so that was tasty. I just cannot seem to make non-greasy, but crispy, hash browns. And getting required fruit and vegetable servings is a joke while camping. So, last night, we had salad and steamed broccoli when we got home late. I went shopping today and bought fruit and more veggies. Tonight is a brown rice bowl with oriental seasonings. We'll top it with leftover broccoli, bacon, and a fried egg. No more cardboard freeze-dried food for awhile. Next camping trip is in August. Thanks for the thread. PepsiGal - sorry to hear that news. You seem like a person with a good attitude about life in general. May it help you to know we are thinking about you. I have crappy eyes, too, and worry about my vision. Keep us informed, please.
