Once again only 2 people will be eating dinner. So, I think this will be our taco night. Last night they ate leftovers, because there were many that would have gone to waste. I need to figure out how to cook for just one, soon. When the boys are off to college dh will still need dinner.
What's on your menu?

Smoked pork chops here (with potatoes and salad). I did plan on something with redcurrants for dessert (DD and I picked 6 liters earlier today), but that will have to wait for another day. Instead, I'm having chocolate for dessert.

DS is away for the next 2 weeks.
So, if DD is eating home then we are having pork loin roast with spaetzle and veggies.
If DD is going out with friends I think I'll jst grill a couple if burgers and make a salad.
I just bought an awesome corned beef I want to try it I. The grill with grilled onions later in the week.
Has anyone ever grilled corned beef? Or cooked it any way besides biking it? Any tips?

Ds has a billion grad parties again, so dh and I are meeting friends, who are also cousins at Maggianos for dinner. We live too far apart to get together as often as we would like, and it will be nice to have time to visit without kids and extended family.

We're having leftover pork chops, tabbouleh, and roasted potatoes. Still no word on my boil order, but I am catching up on laundry. Update: the city says our water is good. The employee that took the sample came by personally to tell me. Also, no boil order expected next week whenever they reconnect their new lines.

Crazy day. 20 mins between activities. Grilled sausages in french bread with a handful of cucumber and cherry tomatoes so I don't feel like a bad mum.

Day one of vacation here and the weather is kind of crappy so no boating or beaching for us today That means that we will cross the border into Washington state and shop for groceries at Walmart in Colville, Washington ... this is where I stock up on my precious Ro-Tel every year After that we will eat at this really great Mexican restaurant ... I bring some of their fresh salsa back to the condo as well because it is soooooo freaking good

We have a softball tournament and also want to spend time at our cottage on the river. So today will be grilled hamloaf burgers with grilled pineapple and tomorrow will be chicken and shrimp kabobs with grilled veggies from the garden and new potatoes. I also have some zucchini so I may spiralize it and sauté with EVO and garlic, then add some cherry tomatoes and feta cheese. I have everything for Italian cream sodas too. I love summers on the river!

It's take-out night at my house, so when I was shopping this morning, I bought 6-lbs. of ground beef to cook and freeze for the future. I'm cooking 3-lbs. (with onions, garlic, and green peppers), then I will cook 3-lbs. as sloppy joes. valleyview , I'm glad you're water woes are almost over!! scrapmaven , good luck figuring out how to cook for fewer people! When you figure it out, please share the secret with me. Over the years, the number of people I cook for has changed, both up and down. I can do the "cooking for a crowd" easily. The cooking for one or two, not so much.

The kids' dad said that he would grill hamburgers and hot dogs. I am not really in the mood for either, but since he's cooking, I will likely just eat a hamburger. I am also planning to finally make the Greek tomato/feta/onion appetizer that I have been thinking about for weeks. I will buy delicious Italian bread to go with it. Lisa

As usual I have no idea what I'm doing for dinner yet. But I want to make some freezer meals for my dad who just got home from inpatient rehab yesterday. My goal is to make some spaghetti sauce, meatloaf and a third entree over the weekend. So we'll be eating the same

Dh and I are going out tonight and haven't decided where- last night I went out with my best friend to PF Changs and he peppered steak and cauliflower tempura and spiked lemon tea. Good stuff!! My birthday is Sunday and I plan to eat out every night this weekend! Lol

We've had grilled chicken the last two nights so I'm thinking something different tonight. I bought a great box of ravioli from the farmer's market last week so I may make those with a white bean lemon pesto. Otherwise I may just do a quinoa bowl for myself and let my husband have the chicken and a protein smoothie (he's trying to diet and he's perfectly happy eating chicken for every meal).

Yes I've alway boiled or cooked it in a crock pot in water as well but I read an article on grilled corned beef and wanted to give it a whirl. And the peas usually know and have tips for everything

So we'll be eating the same When I did meals for my parents(mind you there were the two of them) I used to buy foil pans that came with foil covered lids. That way all my mother had to do was pop them in the oven. She was able to safely use the oven better than the microwave. I could load the containers with what I knew they liked and Ma had no extras like gravy to worry about. But I did have to argue with her and make her throw them out after dinner - I didn't want her standing there trying to wash them.

The company DH works for is having an employee night at the Iowa Cubs game tonight (the Chicago Cubs Triple A team) and food is way too expensive at the park so we're going to eat early before we go. That way we can spend our "ballpark dollars" the company gave us on beer, popcorn and cotton candy. We're grilling a piece of swordfish and a piece of salmon on a cedar plank to share, corn on the cob and baguette with bruschetta.

DH is getting good at fending for himself thankfully.
Went to the doctor yesterday and she sent me to ER. Had a full blood work up done and an x-ray. My potassium was way low and I have an upper respiratory infection. So still no energy for cooking or anything else. And my muscles burn like crazy when I first start to use them so sitting and doing nothing seems perfect.
I might just do a fruit plate or maybe a bowl of soup, hot food seems to be calling me.
