As usual I have no idea what I'm doing for dinner yet. But I want to make some freezer meals for my dad who just got home from inpatient rehab yesterday. My goal is to make some spaghetti sauce, meatloaf and a third entree over the weekend. So we'll be eating the same When I did meals for my parents(mind you there were the two of them) I used to buy foil pans that came with foil covered lids. That way all my mother had to do was pop them in the oven. She was able to safely use the oven better than the microwave. I could load the containers with what I knew they liked and Ma had no extras like gravy to worry about. But I did have to argue with her and make her throw them out after dinner - I didn't want her standing there trying to wash them. Thank you I'm getting ready to do the shopping, butcher shop for the meat, produce stand, $ store for the containers and whole foods/paycheck for the best canned crushed tomatoes.

That was another thing on my list for my dad, sloppy joes! Thank you Happy to help! It will be so nice for your Dad not to have to worry about meals so he can concentrate on getting better. I hope his recovery goes smoothly! Thank you He's on Medicare so the rehab place was really bad He has been looking forward to going home since the day he checked in! oldcrow I hope you feel better soon!

oldcrow , I hope you're soon feeling better. Peaches, cantaloupe, or bananas might help. Thanks for the good wishes. Doc gave me Rx for mega doses of Slow K so that should bring my levels up.

oldcrow, none of what you have sounds good. Take care of yourself and I hope you feel better soon! Your comment earlier about your Mom washing the disposable containers made me smile. When I was helping my parents pack for a move recently, my mom insisted on paying the moving company to move boxes of empty cool whip, margarine tubs, deli containers, foil containers, etc. I attempted to talk her out of it, but then I remembered the lesson I learned growing up: Don't argue with your mother.

So... homemade cheese pizza with a veggie filled sauce. I will make the dough and sauce from scratch.

DH smoked a brisket and made pasta salad. I marinated some cucumbers and made a pistachio pudding pie.

I need to figure out how to cook for just one, soon. When the boys are off to college dh will still need dinner. Don't you mean two??? You and DH?? The irony of starting this thread is that I cannot eat normally due to a disease. So, I cook for everyone else and I have a feeding tube.

DH is getting good at fending for himself thankfully. Went to the doctor yesterday and she sent me to ER. Had a full blood work up done and an x-ray. My potassium was way low and I have an upper respiratory infection. So still no energy for cooking or anything else. And my muscles burn like crazy when I first start to use them so sitting and doing nothing seems perfect. I might just do a fruit plate or maybe a bowl of soup, hot food seems to be calling me. Bananas are full of potassium. Hope you feel better very quickly.

I had the job of cleaning out my parents home in which they had lived in for 9 years. 10 bags of garbage! Most of it were empty containers and little bits of unrecognizable stuff from the fridge & freezer. Dad had already passed and mom was ill & in the hospital, waiting for a room in a nursing/retirement home. I also had a grocery bag of prescripition drugs. I took them to the pharmacy for bio-hazard disposal. DON'T EVER FLUSH MEDS DOWN THE TOILET. TAKE TO A PHARMACY.

We had pizza brats from the Amish store. They had pizza spices and mozzarella cheese in them. I cooked them on the grill in a foil pan, when they were almost done I added diced Vidalia onions and pizza sauce. We had garlic bread instead of buns. We both really liked them. We also had homemade pasta salad with Vidalia onions and homegrown cucumbers(again). For dessert DH is having a piece of peanut butter pie and I am having a piece of angel cream pie, both from the Amish store.

I have done that for so long I don't even consider a banana a piece of fruit. It's just part of my breakfast. I could switch things up with an orange or some orange juice but I never do.
