Tonight only 2 people will be home for dinner. Last night I made gyoza, rice and salad. We have serious leftovers from the week. So, it'll be something simple like leftovers or even sandwiches. Today is all about rest and perhaps a puzzle if I can summon a bit of energy.

Tonight oldest ds it out at a baseball game and firework display. I asked youngest ds what he'd like for dinner and he couldn't think of anything. So, I've made an executive decision, we're having grilled chicken breast, Trader Joes baked fries and salad. I think there's still ice-cream in the freezer too, so the male species can have that for dessert.

I'm thinking something like simple. soft pasta tonight, maybe with a meatball or two. DH wants salad to go with so he'll have that. I think we have some canned pears - that'll work for dessert.

Last night I fed my family....wait for it....Cup of Noodles! Yep, you know the ones that come in a Styrofoam cup.

Dh took out steak for me to grill. We'll have potatoes and carrots with it. He says he's attempting to clean out the freezer in anticipation of our upcoming move...apparently it's full of steak (I'm certainly not surprised!!!)

Tonight I am hoping to do better, there is no way to go except up!! But, at least you served something. My dinner tonight is a teeny, tiny step above Cup of Noodles. It will be shredded meat of some kind (whatever I find first in the freezer) in a bun. I'm not sure about sides, but I can definitely say they won't require much effort on my part. The rut I've been in has turned into a ravine.

DD is here and she wants to go to Costco tonight, so we'll either eat there or take something home from there. She loves the shrimp cocktail platter so maybe we'll pick up one of those. Last night, the 7yo didn't want a hot dog (naturally) ... he wanted a soft-boiled egg for dinner. Remember I said he loves eggs? Ever since I found a couple of my grandmother's egg cups in the back of the hutch and explained to him about soft-boiled eggs, he's been bugging me to try them. So he had a soft-boiled egg, toast, and watermelon and blueberries for dinner. And he loved it. He had another one this morning. We are fine tuning the cooking time. (Who eats soft-boiled eggs in this day and age?!) That child was born a little (nerdy) old man.

Any that can't be eaten can be packed in dry ice and mailed to me ~ we love steak! I love it because it's so easy to light up the gas grill and throw those puppies on!

The Creamy Chicken Penne went over well again last night so it is definitely a keeper ... whew! Tonight is grilled burgers and hot dogs served with roasted potatoes and a tossed salad

I think tonight, if I ever get out of work, is steak and cheese subs. I have left over IP mac & cheese that I'm going to "fry" in the air fryer as well. Either it will be a great success or an epic failure.

Kitchen painting is done and everything cleaned and put back! On to the family room next week but I'm taking a few days break.
Tonight it's just pasta with a red sauce I bought at Aldi's, meatballs on the side for my DH (I prefer my pasta without any meat either in the sauce or on the side), a lettuce salad with my homemade zesty Italian dressing I keep on hand and I'm whipping up some bruschetta from the batch of tomatoes and basil I harvested this morning to use up the baguette that is going to go bad if we don't get it eaten.

DS is going to a friend's house, so I think I will try to get DH to eat the last Bratwurst from Wednesday with the leftover mac and cheese - hell, I would even make him a different side item if he wanted! I made egg salad for my lunch today, but ended up with Arby's, so I will probably have an egg salad sandwich for dinner.

Well, it is a rainy day in the deep South so we stayed inside all day long. We had veggies for lunch - corn on the cob, black eye peas, some leftover potatoes, fried okra and leftover cornbread. I made a Pineapple Sunshine Cake this a.m. which was delicious. That's the first cake I'm made in ages - we don't eat that many sweets in our little household. Now I can't wait until breakfast on Saturday to have another piece of cake.

So while I was out of town with DD, my guys ordered pizza from the pizza joint down the road. Chicago deep-dish style with all kinds of meat and other toppings. They paid $35 for that pizza. My cheapskate husband actually forked over $35 for ONE pizza! They claim one slice was big enough for a complete meal, and they ate leftovers for three days. So it really only cost $9 per day for the two of them to have a decent meal. And that's what they want to order tonight. A $35 dollar pizza!! I think I might agree, if only to humor them. But it had better knock my socks off.
