Dh took out steak for me to grill. We'll have potatoes and carrots with it. He says he's attempting to clean out the freezer in anticipation of our upcoming move...apparently it's full of steak (I'm certainly not surprised!!!) Any that can't be eaten can be packed in dry ice and mailed to me ~ we love steak! I love it because it's so easy to light up the gas grill and throw those puppies on! LOL!! I love it too but I like variety in my diet as well! DH would eat beef every day! And we're only moving about 5 miles so there's no reason we can't bring frozen steak with us!

So while I was out of town with DD, my guys ordered pizza from the pizza joint down the road. Chicago deep-dish style with all kinds of meat and other toppings. They paid $35 for that pizza. My cheapskate husband actually forked over $35 for ONE pizza! They claim one slice was big enough for a complete meal, and they ate leftovers for three days. So it really only cost $9 per day for the two of them to have a decent meal. And that's what they want to order tonight. A $35 dollar pizza!! I think I might agree, if only to humor them. But it had better knock my socks off. Our favorite pizza parlor is that expensive so we only go there for special occasions. I've decided on hamburgers with corn-on-the-cob and fruit salad. DH brought home some lovely home-grown tomatoes from one of his golf buddies so they will be perfect on the burgers.

I honestly have no clue. DH is out flying this afternoon and evening and won't be home for dinner, so it's just me. I'm trying to decide if I cook myself some breakfast for dinner, or if I run out later and grab something.

I think I may have won the award for possibly the worst dinner ever served!
Last night I fed my family....wait for it....Cup of Noodles! Yep, you know the ones that come in a Styrofoam cup.
Tonight I am hoping to do better, there is no way to go except up!! But, at least you served something. My dinner tonight is a teeny, tiny step above Cup of Noodles. It will be shredded meat of some kind (whatever I find first in the freezer) in a bun. I'm not sure about sides, but I can definitely say they won't require much effort on my part. The rut I've been in has turned into a ravine. What? I step away for a few weeks and our Queen of Many Side Dishes & a Dessert Every Nite has fallen off her throne? Oh dear, oh dear! Honey, you deserve a little break. Come on down here and wallow w/us Cup O' Noodles folks for a while. As for me, I'm on my own tonite, so it will probably be leftovers. Most likely pasta from Tuesday nite or the cheesesteak from Wednesday nite. I did indeed make everything I listed last nite, so that's in the fridge too, but I'm not in the mood, lol. Oh, and lucyg, I made myself a poached egg just the other morning. Not quite the same as softboiled, but close. And I have one of the egg cups my mom brought back from England 30 years ago, so maybe I need to learn how to make them!

DD is here and she wants to go to Costco tonight, so we'll either eat there or take something home from there. She loves the shrimp cocktail platter so maybe we'll pick up one of those. Last night, the 7yo didn't want a hot dog (naturally) ... he wanted a soft-boiled egg for dinner. Remember I said he loves eggs? Ever since I found a couple of my grandmother's egg cups in the back of the hutch and explained to him about soft-boiled eggs, he's been bugging me to try them. So he had a soft-boiled egg, toast, and watermelon and blueberries for dinner. And he loved it. He had another one this morning. We are fine tuning the cooking time. (Who eats soft-boiled eggs in this day and age?!) That child was born a little (nerdy) old man. Sweet! I've been eating pretty much non-stop since I got to work. We have leftovers from yesterday's potluck, so you start with leftover dessert when you get in; assorted chips to fill in between then and lunch; leftover turkey burger and salad for lunch; and then, to cap off the day, some "hint of lime" tortilla chips. I am not hungry <understatement>. I am really, really hoping BF goes out for drinks and pizza with the "boys" tonight! I will stay at home and enjoy celery and a glass of wine. Wine pairing with celery???

All this talk about eggs reminds me of something. On Monday, DH and I played 9-holes of golf then went to Jim's Country Style Restaurant for lunch. Instead of a sandwich or burger I opted for 2 eggs over medium with crispy hash browns and sour dough toast. It was perfection ~ I almost licked my plate.

Oh lucyg, I love soft boiled eggs but too much trouble for me so I just put two eggs in a small frying pan with butter and cook softly. Yum!
I haven't been to the grocery store since all the grandkids and DD left. We've been so busy.
I made black bean and corn chili with sautéed chicken. Easy since it was leftovers.
AND I now hold the title of wife of the year because I made a fresh blueberry pie.
