So last night at the soccer game, I'd forgotten to mention that we had Club Seats so we had better food options and was able to eat in the a/c (which it was still 90+ at dinner time). The best part?! They had salads!!! I got a grilled chicken Caesar salad and got the dressing in a packet on the side. It was a really big salad, it had croutons and shredded parm on it...but it was STILL a much better choice than anything else. Once I saw the salads on the menu, I didn't even look at anything else because I know I would've talked myself into something else. I ate about 3/4 of the salad though - and that's way more than what I'm used to portion wise. And to top it off, I had 1/2 a piece of fried dough. I ate so much I was full for hours..we ate at 6:30 and when we went to bed at 12:30, I was STILL full. But I'm still happy with my choices there!

Happy Sunday! I have had a very productive day because my husband has been gone all day Funny how that works? I really like to do food prep on Sundays and when I am alone I can get it done in about 3 hours but when my husband is home it can take all day. Today I made enough tuna salad for each of us to take for lunch all week. He likes sandwiches, I like to fill leaves of romaine lettuce and eat it like a wrap. I also cut and portioned a weeks worth of veggies and fruit for our lunches. I invested in a 10 sets of lunch containers so I can make all of our lunches and just have to grab one each morning. I also made a bunch of chicken and shredded it. I've made a pan of chicken enchiladas, set aside a batch for chicken caeser wraps, and I have coconut curry with shrimp on the menu as well, that should hopefully cover the whole week. I am still swimming for the majority of my work outs. I work for a company that caters to swimmers and they just hired a woman who swam professionally, we have really hit it off and she has been coming to the pool with me and giving me some tips to make my laps more efficient! When I started I could barely do 6 lengths, now I am swimming 1 and looking forward to upping it to 20 soon! If any of you ladies are interested in swimming for exercise I totally recommend it! It is a bit of a process to get ready, but I can finish my work out in about 20 minutes and it is a full body work out!

So for those of you who prep for the week on Sunday...I see that you said you cut up veggies and fruit and portion them out. And also the tuna salad you made for the week. But how does it all stay fresh? When I cut strawberries they only last maybe two days and if we don't eat them before then they get soggy. ick. And will tuna salad last all week? And I'm here to tell you right now that there is NO way in heck that I'd spend that much time dealing with food on the weekend. I really really hate all things having to do with cooking, and that includes the thinking it up, shopping, hauling, putting away, etc. At least I had help with the hauling today. ugh

The strawberries NEVER last more than a few days so I'm halving more strawberries mid week. The pineapple and grapes are fine for the week. Can't answer the question about tuna salad because I make it fresh if I want some. LOL It does take a lot of time but for me to be successful, I need to do at least some of it. Prepping the dinners is REALLY worth it for me because that means everyone just heats up what they want each night and I don't have to cook at all. LOL

I only prep for the work week. As long as every thing is sealed properly it lasts, but I own a foodsaver so I vacuum seal the stuff that won't last as long under normal conditions. I don't hate cooking, but I only have to cook for two people. And in the summer I don't really cook all that much. I don't consider a chicken caeser salad wrapped in a tortilla cooking. As for fruit, I am not really a huge fruit fan. I would rather have carrot sticks and sliced cucumbers than grapes and strawberries.

We also shop in bulk. I had to go to the store today to get little bits and pieces for the week but I didn't spend more than 20 minutes in the store. I live less than a block from my local market so I use it as an excuse to get a short walk in.
I only do bulk shopping once a month for protein and cupboard staples. I can "shop" my pantry easily for a meal. I do not discriminate against frozen and canned vegetables when I am scraping together something. Last week I thought I would have to go to the store to make a decent meal, but I had spinach, corn, onion, zucchini, yellow squash, and chicken breast all at hand. I grilled the chicken and sautéed all of the veggies together and served it all on one plate. My husband isn't a picky eater and I only buy stuff I like, so I'm only cooking meals I like.
Today for the enchiladas I made I only had to buy enchilada sauce and tortillas. I had everything else on hand. That is why I meal plan, if I flew off the seat of my pants every night I would be going to the grocery store every night.

brandy327, maybe you can refriend carblover? Or message her and let her know we miss her. She can always come back with a new name in some. time. Her relative has shown us all his true colors. I am guessing she deleted all peas, knowing someone gave her up to him.

Hope you get good news at your appointment, mrsp . I'm the same with lipids and diabetes. I watch my hemoglobin A1C rise even when I lose weight. Despite popular lay opinion, even skinny people who do not eat carbs can develop type 2 diabetes. My mom's dad was in great shape up until he was at least 80. He would row on his rowing machine to China and back. He became insulin dependent at about then, too. He liked sweet food but he had not an ounce of fat on him and he was in great physical shape. I am pretty nervous that I might develop it at some point. My mom's brother got it, too, but he was a heavy eater and drinker. He wasn't morbidly obese but he was overweight and not active. (No exercise). My sugar is good now, but it doesn't mean it will always be. This is why I don't eat bad carbs. I limit my fruit consumption, too. I do have cheat days. We went out to a birthday party at a Chinese restaurant and I ate what I would normally eat at one. I wasn't happy about it, but it was a birthday. I think with my weight loss so far I have nothing to complain about. It is coming off slowly, but as long as I eat under 40 carbs a day the weight is coming off. I did kind of eat a lot of cherries this morning. (They were so good!) and cherries are real food so I figured you win some and lose some. So I had lots. Loved them, too! The rest of the day was all on the diet, just like every day. Tonight I may be having lobster. Long story but hey you only live once! If I can get my behind in action I would like to go for a walk after dinner. Maybe it will happen.

Well, we had a major change in the schedule today. We ended up going to a small local-ish zoo and then the wading pool with our neighbors. The kids wanted tacos, so I made taco meat and pico de gallo. I can have some for lunch tomorow as well. We will gill Tuesday. My meal prep didn't go as planned, either since we didn't grill. I did make some hard boiled eggs and have some bone broth in the crock pot. I thought that I would be more limited in lunch ideas with going paleo/grain free. But now that I have spent some time looking on Pinterest and in cookbooks, I actually feel like I have more options. I do have to be prepared, though. Some things that I have thought of so far: Salads with various meats and veggies Lettuce wraps with nitrate free deli meat, cucumbers, shredded carrots Tuna salad or tuna on cucumber slices Turkey meatballs made with veggies Leftover chicken with veggies Fruit/veggie/egg snack tray with or without nuts I have made this before and actually might make it this week.
