I'm not really doing much cooking this week. I'll only have one person to cook for and it'll be simple stuff. Tonight he'll probably eat a sandwich or something from the freezer. It's that simple.

I'm roasting a chicken and having ratatouille as the side. I have that stewing away now, so the flavor should build by this evening.
Tonight's dinner is going to be part of tomorrow's meatless Monday and then I'll be using the chicken on Tuesday. Hooray for an easy week!

For the first time in 2+ weeks, we FINALLY have a cool day. I have some chicken tenderloins marinading in a mexican lime marinade and I'm going to make mexican pizzas on whole wheat tortilla shells - it'll have chicken, mexican shredded cheese, black beans & rice and corn. I'll have mine topped with some chopped lettuce and sour cream.

I want to still be on strike but that's getting too expensive. I'm probably going to have to cook or direct someone what/how to cook.
It'll be lamb chops with rice and veggies hopefully I can convince someone to grill for me.

Potluck last night was a lot of fun ... 27 people! My Greek salad went over well again but I made two just in case and now I have leftovers ... That means that we will be eating it for a couple of days Tonight we're having grilled steak and salmon with corn on the cob and Greek salad

Pulled pork in the instant pot, served on slider rolls with Cole slaw for those who want it, pickles that I made that my mom tells.me are spicy, and chips- bought all four of they Lays international flavors to try.

Shepherd's Pie. That's usually all DH needs, but I have some veggies ready if he needs a side. I bought some gorgeous yellow tomatoes and some sourdough bread, so I'm thinking a tomato/cheese sanwich for me.

DH is heading out in a little bit to go to a family dinner. This is finals week for me, so I'm staying home to continue homework/studying. We have some leftover spaghetti from a couple of nights ago, so that is going to be my dinner.

On Sunday, lunch is our main meal. We had grilled marinated chicken, with a pasta salad.
Sunday evenings I am out with my SnB buddies and usually just have cake.

I have a good new/bad news story for today's enjoyment. I had two packages of salmon that I grilled yesterday. One of the fillet's was unbelievably delicious. The other, larger one was spoiled. I knew it was a little off when I was preparing them but with fish ~ ha, hard to tell ~ KWIM? So the first little bite confirmed DS and I should eat our portion so I gave us some leftover ham. DH said he felt bad sitting there eating this wonderful salmon while we ate ham. So the good part of this story is I was just at Raley's and as you enter the store they have a temporary display where they are selling fresh fish. The butcher greeted me so I told him my story and he promptly sold me over $12 worth of snapper for $2. I didn't even have my receipt. Have I told you before that I love Raley's.

DGS is with us from out of state. Lots of bad meals at our house for a while. He requested homemade chicken tenders, mashed potatoes and peas. He would also like a few edamame in the shell as a treat because a 14 year old boy shouldn't be eating a lot of edamame. DH and I will also have left over grape salad. Tried talking DGS into eating a little salad as well, but it's a no go right now. His mom said he LOVED salad, so I made a huge one today for lunch with everything he likes. Um, excuse me DD, no he doesn't, says he.

I wasn't going to bother returning them, but when I went back to the store, I picked up a bag of red potatoes (in case the Idahos were still sucky) and mentioned it in passing to the cashier. She insisted on giving me the red potatoes for free, even though they were more expensive and honestly, I'd totally been able to use half of the other bag. I too am a big fan of Raley's!

Since I currently have the contents of my kitchen split between two places ( not dh's best idea!) we ordered out from a local restaurant. We got a "bucket" of pasta with meatballs and sauce and rolls. There was enough for three very hungry adults and a good portion leftover for my lunch tomorrow...and it was about $22. Not bad considering the cost of takeout.

It's the long weekend here - Canadian Civic Holiday weekend, and middle DD just finished her last shift at work before heading to school 3 hours away in September.
So we are having steak, baked potatoes, fried cabbage, and a lovely green salad (cabbage & salad greens from our organic loft box), and I also made bacon wrapped chestnuts to nibble on.
The girls and I are making margaritas for later too!
