gale - note I change the website url in prev post (in case you missed it). I don't know why it keeps changing. took me 5 or 6 tries to get the right one to pull up. check all that have her name in the url and are on facebook - and are in English. I ran into a few in Spanish (I think) and others on facebook w/out her name in the url. again, the first pic you will see is her in long sleeve black top with red apron. I wonder if it won't direct link, is because it's set up as a private group?

Has anyone used the slow cooking feature on their Instant Pot? I'm curious to see how it compares to using a slow cooker.

I've only used it after I've cooked things using pressure. For example, if my beans have too much liquid, I'll put it on "less" "slow cook" for a while with the lid off while I continue fixing the rest of the meal.

The pumpkin pie turned out delicious. I used this recipe www.pressurecookingtoday.com/pressure-cooker-pumpkin-pie/Hope that works. I'm on my phone and I've never posted a link from here. I used plain shortbread cookies instead of the pecan Sandie and the crust was good, but very thin. I think I will use double the amount of cookies next time.

I bought aborio rice today and whole milk. I'm going to do rice pudding tomorrow for dessert! Went to a restaurant supply store close by to get some insert pans, but they were out of 6" pans! He said he could order, but I will just go to Walmart or kitchen plus. I did, however, score 4 beautiful ramekins for 5 bucks on sale!

Easiest. Dinner. Ever. One large can (or two regular ones) diced tomatoes. Put them in pot. Add salt, pepper, whatever seasoning you want (I used Italian), garlic. Stir that all around. One pound pasta on top of that, no stirring. I used shells. Broth to just cover pasta. Sausage on top of that. I used the Aidells chicken and apple from Costco, four sausages cut up. High pressure 3 minutes. Quick release. Done. I took it out of the pot after I took the photo because I thought the pasta might overlook if it sat in the pot. When you first open the pot it seems a bit liquidy. But it thickens up nicely after it sits. And...think of the variations you could do with this. Substitute shredded chicken for the sausage. Or any meat really. Choose the already-spiced tomatoes, or change up the spices yourself -- I have an Asian spice blend that's really yummy. Omg. Where was this pot when my kids were playing sports and dancing? But for sure this has changed my outlook on the what-to-cook-for-dinner horrors that I face when I'm tired after work.

I haven't grilled anything since being back from vacation! I've been having too much fun with the IP. Today, I picked up some brats while grocery shopping to remedy that. My IP didn't get the night off, though. YDS and I ran to the farmer down the road and snagged some fresh-from-the-field sweet corn. The corn was extremely awesome! Crisp and flavorful. Bonus -- No one had to listen to me whine and carry on about having to stand near a pot of hot, steamy water and heating up the house while making it.

I'm trying cheesecake, but I have steam coming out and I think the seal is loose. It came to pressure. What are you supposed to do if this happens? Stop it?

If it came to pressure and the timer is counting down, just let it do its thing. It will be fine as long there is enough pressure that the locking valve stays up.

For some reason, I thought I read that the handles couldn't be left in the up/open position because of the width of the 7" pan. I made this Honey Bourbon Chicken for dinner tonight (it's good!) and the rest in the freezer for another night. Just have to reheat and thicken the sauce and we're good to go. I also made another lemon cheesecake Friday... I really have to stop doing that - I'm going to be a blimp if I'm not careful! ETA: oh, I should add that my chicken was partially frozen but no way did I cook it as long as the recipe said - I would have ended up with charcoal if I did! I cooked it on manual for 18 mins, NPR for 5 mins, and then QR. Even then, it was getting jusssst a skosh too done. Next time I'll just do the 15 mins, period. Anyway, it is very tasty! Attachments:
