jI'm planning for a cooking day of getting some things in the freezer for quick meals, and I want to get some things prepared that I can use for quick lunches. I'm trying to diet a bit and would like things to top salads with, and I can't come up with things besides grilled chicken, boiled eggs, or sliced cheese. I need protein because I'm diabetic and carbs are not so good. Any good ideas? If you have any great salad dressing recipes, that would be great too. Thanks for your help!

I used to bake or grill my boneless skinless chicken breasts but I was watching a cooking show and the chef was steaming the chicken breast. he seasoned it like he would for baking or grilling and then he put it in the steamer and let it cook. I did it and man it was so moist. I will never bake another chicken breast again.
I make a big pot of red sauce and freeze it in food saver bags, I do home made chili the same way. and if you don't do pasta then you can use the red sauce over zucchini or eggplant squash kind like you would a lasagna using the eggplant as the pasta.
I love cauliflower and broccoli and nobody else in my family does so I have a bag of each in my freezer. I like to put them in a baking dish with a little butter and garlic salt and bake them for a few minutes.
we make big batches of taco meat and freeze meal size portions. My daughter and I like ground turkey taco meat and my husband likes ground beef so we always have 2 different pots of the taco meat and chilli when we make them. then when we eat them we thaw out his kind and our kind. I can have taco dinner on the table in 15 minutes. We usually shred a big pile of cheese and put it in a bowl so we always have shredded cheese in a minutes notice.
we do alot of salad. I like lots of veggies in my salads but husband only wants iceberg lettuce green onions and Parmesan cheese. so I will cut up all my veggies on 1 day and put them in food saver containers and 'I will have salad makings ready in 5 minutes all week long.

I use feta cheese, egg whites, reduced sugar craisins, bacon, sunflower seeds, any protein, grilled corn, black beans. Almonds, pistachios, diced olives, fresh fruit, and bruschetta topping (the diced tomatoes and basil n garlic) ETA- not all at once!!!

I loooove beets in my salad but I wonder if that's too much natural sugar for you? Same with fruit ... many are good in salad such as apple slices, oranges, berries. Sunflower seeds, walnuts or pecans. Thinly sliced red onion. Shredded cabbage, baby spinach. Sliced or diced tomatoes, cucumber, radish. Garbanzo beans, kidney beans, black beans. Chopped bacon.
I think there was a salad thread here in the last few days .. you might want to search for it.
