I made steel cut oatmeal in the IP this morning using this recipe. I followed the first part of the recipe for the actual oatmeal, then when it was done I added frozen organic blueberries, put the lid back on and let it sit for 10 minutes to defrost and thicken. It was very good and DH liked it too. I put the leftovers into containers and into the freezer to test how well they reheat from frozen. DH often eats the frozen steel cut oatmeal from TJs for breakfast, so I'm hoping this can replace it. I have yogurt going in the IP now, using Elaine's instructions. This is a first for me. It's kind of silly how excited I am that I'm making yogurt from scratch.

Things I have learned in the last 24 hours: 1. If you accidentally dump a cup and a half of water directly into your Instant Pot, forgetting that you didn't put the inner pot in there yet, it will all drain out of the bottom on to your countertop and you will cry a little. 2. Instant Pots are really hard to find in store. At least THAT particular brand. So, you can go on Amazon and try to rush ship one. 3. If you Google "I messed up my rice cooker/pressure cooker by dumping water in it" the comments will tell you to let it dry for 24 hours and try it. I turned mine upside down for 12 hours and right side up for 12 hours and let it totally dry. It worked! I didn't kill it! 4. You can request a cancellation on an Amazon order even if it already shipped. 5. This egg muffin recipe worked pretty well: www.pressurecookingtoday.com/egg-muffins-in-the-pressure-cooker/ I left out the bacon and put in some fresh chopped broccoli instead. About to try hard boiled eggs and then the lasagna recipe I posted about earlier. I'm really glad I didn't kill my Instant Pot already! Really glad

I've taken a few days off from cooking to use up leftovers and odds/ends before the next big grocery shopping + Costco trip. I did make rice pudding a couple of days ago and it was excellent. DH and DD gave me "mehs" and said that they prefer their pudding completely smooth. They're so nitpicky I acquired some raw peanuts and plain popcorn kernels today, so those are in my plans for the next couple of days. I also want to try making yogurt this weekend. I love, love, love my Instant Pot

Elaine, I did my first batch of yogurt today and it is straining now. How long do you let yours strain, is it perchance safe to strain out of the fridge? How did it turn out for you? Mine is nice and thick. Ds and DH had bowls of it for breakfast.

Mine is nice and thick. Ds and DH had bowls of it for breakfast. DELICIOUS! I strained it overnight though (in the fridge) and ended up adding some liquid back in- it was almost cream cheese consistency which was a bit thick! It is really good though, I had a big ole bowl for breakfast. Just plain yogurt with chocolate coconut chips on top and it was divine. I used a local companies yogurt as my starter and it tastes nearly identical to theirs. I actually don't really like yogurt except for this one brand, so I am really excited to be able to make my own. For the price of the milk I made the equivalent of their 11.99 size container!!! I did pay for the small batch of theirs (3.99), but I have enough of it to use for starter for at least 3 more batches. I know I can use my own as a starter, but I think I will just use theirs. Have to do my part to keep them in business since they are going to be losing my weekly big jar purchase! I used to just use cheap yogurt in my daily smoothies, but I think I will make two batches a week and use the homemade yogurt in my smoothies too since I hate all the crap they add to store yogurt. This thing is fucking magical. There was the day I made boiled peanuts, hard boiled eggs, and rice pudding, all before I even made dinner. And at the moment I have a crustless quiche in my IP. My family looks at quiche as a nice summer meal, except for me because I have to put the oven on for almost an hour in order to cook it. Or, I should say I HAD to. Hopefully this IP quiche will replace my oven one forever. eta: My quiche recipe said 20 minutes but I'm sometimes skeptical of these times on recipes so I cut it down to 15 minutes. Plus the 10 NPR. I just took it out and stuck a knife in it and it's not done. So I put it back for 3 minutes. lol. But I'm really feeling comfortable now with this magical appliance, and I'm no longer afraid of blowing up the kitchen. rofl SaveSaveSaveSave

But this is a keeper too. My IP recipe notebook is growing. lol. I was on Amazon looking at round cake pans that will fit the IP and the one I found is $15.00. I said to my husband "I'm not sure I want to spend $15..." and he said "why not? clearly this pressure cooker isn't one of those appliances that gets used twice and then put in a cupboard." lol. He realizes the value of this lovely magical pot. (I'm still going to check in a thrift store first though, before I spend $15.) SaveSave

The special outlet saved me both times. You know that now I put the inner pot back in as soon as I wash it. I made Butter Chicken in mine tonight. Here's a link to the recipe: Butter Chicken . It was VERY good and I am not fond of Indian food. I had to buy Coriander Powder for the dish. The Indian section in my store had a huge bag for $3. I didn't want that big of a bag, so I went to the regular spice aisle. They wanted $6 for a tiny jar. I went with the bag!

Really glad But if you have soapy hands and you have drank too much coffee, and you drop your instant pot, you will totally kill it. Ask me how I know. I am glad that yours was able to be revived! On the upside, my new instant pot was delivered to me yesterday and it was like we have never been apart. I made a butter chicken sauce in it tonight and it seems pretty good so far but I haven't done the tandoori chicken yet so we will see once it comes together. I made beef stroganoff last night for DH and DD. It is so much better done in the instant pot. The flavours are amplified so much, you just want to drink the sauce.

Crap, crap , crap!! I just made the oreo cheesecake. Yay, right? Except I didn't add the extra yolk called for and in the jumble of getting the filling made and dancing around dogs and DS making breakfast burritos, I also left out the 1/4 of cream. How bad of a fail will this be? I am in the cooling stage and will place it in the fridge until after dinner. I am not going to wait until tomorrow to try this thing out. I was so excited that it looked so good when it came out of the cooker.
I guess now I will drown my sorrows by making my boiled peanuts. sigh.....

So far today: 1 gallon of yogurt fermenting in 6 quart IP. Boiled peanuts finished and almost all eaten in the 8 quart IP My boys are still on summer break and DH is telecommuting. Between the 4 of us, that pound of peanuts is almost gone within an hour of opening the lid on the IP. I've never eaten boiled peanuts before - they are amazing! You can really tell that peanuts are legumes, rather than nuts, when you eat them this way. Aren't they great?? Here's my lunch: I feel like I'm back in Africa although there was no Guinness there. Lol And for dessert I think I'll have rice pudding. When I was in West Africa, mainly the Gambia, we often had what we called Brown DInner... Boiled Peanuts, Expired Cadbury's and Guinness! It was the perfect antidote to huge the spicy lunches we had almost every day.
