Please don't tell me I need an air fryer too! I am just getting cozy with my IP. I just did my 4th batch of yogurt yesterday and I made a quinoa salad. Since I only have the one IP, I finally got smart and cooked a batch of quinoa first before putting the milk in for the yogurt. So far, the bulk of my diet has come from that thing. Tomorrow, I plan to make a small batch of eggs for some egg salad. I'm not a big bread lover, but I love egg salad, so I'm stuffing a large tomato with it instead. I even made a special trip to the grocery store for it.
Oh, that reminds me. I also picked up some beans to make a batch of ham hock and beans. That post about it last week has stayed with me. But my closest store didn't have any ham hocks. I was surprised. It is a large chain store. Am I going to have to find a butcher to get the ham hocks these days? Don't regular grocery stores carry them anymore? I know they used to. In fact, the store I went to is the last place I got them. They were under different ownership at that time though. I think that store has gone through 4 different ownerships in the 30+ years that I've lived here. It is an Albertson's now. I would think they should carry them.
If you have recently bought ham hocks, did you get yours at a normal grocery store or a butcher's?

Amazon should be paying you all for the enabling you do! Yesterday I ordered an umbrella steamer basket, a 7" spring form pan and the handle thing...seriously, I need to stay away! And to be totally honest, if it wasn't for the Peas I wouldn't even have Prime!!

I wanted to make the boiled peanuts that some of you were talking about on our last IP thread, but I couldn't find raw peanuts. I looked on Amazon but wasn't willing to buy such a huge bag. Then someone said that they found theirs at Walmart. There isn't one near me, but we took dd back to school yesterday and there's a big one in her college town. We went there to stock her kitchen anyway, so I looked for the peanuts. On that shelf were several other types of nuts in bags and all of those were fully stocked. But the raw peanut section had ONE bag left! lol. My first thought was to wonder how my IP Peas live in southern Virginia. hahaha Anyway, I bought that last bag, so I'm making those today. And since my dinner isn't in the IP I'm going to try the rice pudding because I found the "arborio" rice also at Walmart. Wish I had a Walmart closer. The closest one is 4 miles but it's in DC and there is no way in heck that I'm driving over there. The closest one to me that is not in DC is 7 miles from my house. I guess I should make the trek there once in awhile because I came home with all sorts of food items that are cheaper than my own grocery store... pasta, peanut butter, those peanuts, a few other things.

(FYI, the beans also didn't taste good) It is quite common for the water to turn red/pink when steaming green beans. They have a chemical called Anthocyanins in them that turns red/purple in acidic water. This is the same chemical / compound that causes purple cabbage. Did you have and lemon juice or vinegar in your water? Next time, add a teaspoon of baking soda to the water and that will stop the red from happening.

Have you looked at your grocery store? Mine carries the raw peanuts with the green label( I think the brand is Hines). They are found in the back corner in the produce. Which reminds me that I need to add these to my list for a lunch gro store run!

I would cut the recipe in half, unless you have 2 springform pans. I would NOT add water to the marinara sauce. Use No-Boil lasagna noodles. Follow the the directions for assembling, except last layer should be sauce. Save last layer of cheese for the end. Cover pan with foil after you are done. Put trivet/rack in the pot. Pour in 2 cups of water. Make a a foil sling and put the pan on the trivet/rack. Cook on High Pressure for 8 minutes. Use quick release. Open the the foil and put cheese on top of your lasagna. If you like lasagna soft, cover with foil again and let sit for 10 minutes and cheese will be melted. If you like lasagna with browned top and crunchier edges, take lasagna out of the IP and put it under the broiler for 5-10 minutes.

I warmed up part of a rotisserie chicken from Costco and tossed in some raw potatoes for lunch yesterday pressured them on high for 4 minutes. Next time I will try 3 minutes because the potatoes were overlooked.

Sure, I said, I am making beef with broccoli and you can help with that. "Oh, I don't want to cook with that thing(IP). You know, just the normal cooking" sigh, I laughed and told him that thing would be easier than normal cooking but if he wasn't up to it, then I would think of something later in the week.
I need him to get comfy with the IP. What would be a good starter meal for him? I figure something like spaghetti. Something that wouldn't take too much adding and too many stages. Soup?

Is the starter amount the same no matter how much milk you start with? If you were only using 1 quart of milk, I'd cut back on the starter. For either 1/2 or 1 gallon, 3 tablespoons is fine. It doesn't have to be exact either. There is a lot of room for measurements when making yogurt. If I don't have another container of milk in the fridge for tomorrow's cereal, I'll just pour milk into the pot leaving a few cups in the carton for tomorrow morning. It is just important to fight the thought process that if 3 tablespoons makes good thick yogurt, then 6 tablespoons must make it even thicker! It is one of those counterintuitive things.

Omg! Woo-hoo! I have boiled peanuts just like I remember them from when I lived in West Africa! I had to stop myself from eating too many before dh gets home. lol Now, if I could just find somewhere closer than Walmart to buy raw peanuts.

Look at this bowl of creamy goodness! Omg it's the creamy rice pudding that I did not get the last time I tried (on the stove, with the wrong rice). In fact.... True confession, I had a small bowl before I tipped it out into this serving bowl. {blush}. Between this rice pudding and my wonderful boiled peanuts I won't be hungry for the actual dinner! Lol

I've checked out almost all our local grocery stores, including Wegman's, and haven't had any luck with smoked ham hocks. The butcher at Giant assured my DH that the pork hocks he sold him were the same thing, and of course, they weren't. They weren't even smoked! I made a pot of bean soup using them, and even added some liquid smoke to rev up the flavor, but it definitely wasn't my usual yummy soup. I finally found some in of all places, Walmart. I haven't used them yet, but will be soon. I have no idea what's going on with smoked ham hocks... all I want to do is make a stinkin' pot o' beans! lol On another note, I'm planning on the IP hamburger stroganoff tonight. I'll report back later with the results.

Today has been an Instant Pot Marathon!!
So, at lunch time, ds asked for rice and beans. Looked in the cupboard, no canned beans!
So, in my 6qt IP I made him a box of Goya's Rice and Pinto Beans. 12 minutes on the rice cycle, instead of 30 minutes on the stovetop.
In my 8 quart pot, I started a pot of black beans using smoked ham pieces I found at Shoppers.
Then, after I served the Rice and Pintos to ds2, I used the 6 quart to cook the pasta for ds1's Jalapeño Shells and Cheese. Only 5 minutes and no boiling pot of water. Easy peasy.
Took the kids bowling. Stopped at Walmart to pick up some canned Kidney Beans for Chili. Also picked up raw peanuts - 2 bags - 1 to boil in the IP, the other to roast in the air fryer.
In the 8 quart IP I have 6 quarts of Chili cooking. And in the oven (boo) corned bread.
But, 4 dishes in the IPs so far today. And I may try the peanuts tonight, although that might wait until tomorrow as an "adventure" with the boys.
