I did Spicy Orange Beef tonight. Another keeper! I was worried because we haven't liked the beef and broccoli recipes I tried. Yay! Winner. What recipe did you use? It sounds yummy. Anyone have a no-fail pork chop recipe? My dh loves pork chops but I hardly ever cook them because they come out dry and/or tough. SaveSaveDo you have Great Food Fast? The Pork chops with mustard and sage gravy is really good.

We went grocery shopping this morning and bought Aborio rice so I can make rice pudding. I didn't tell dh what it's for as I want to surprise him. He loves rice pudding! I can't wait to make it! I also bought a pot roast to make for dinner. We love pot roast but don't usually make it in the summer so that will be a treat! Thanks for all of the recipes, links and anecdotes! You gals are awesome!!

I think the next time I make it I'll either increase the milk a little bit or increase the cooking time. It was excellent, but maybe the rice could have been a bit softer...? Hard to say when I've only made it once, lol. But it was definitely MUCH better than when I tried stove top/oven rice and used the wrong rice on top of that. ugh. I like my rice pudding a bit warm, not ice cold from the refrigerator, so when I heated up leftovers I added a bit of milk to it before microwaving. It was very good! SaveSaveYes I agree! I think the rice needed an extra minute. It was really good and easy to make! I added the raisins to half because my sister does not like them. We also eat our rice pudding cold with cinnamon on top. Yummy!

Oh my goodness!!!! Awesome rice pudding! Dh just ate a bowl of it warm and absolutely LOVED it! He asked if "that pot" was going to replace him, lol. He does most of the cooking since I work full time and he's retired. I can see the IP getting a workout on the weekends

These threads are very helpful Any recipe makes Greek yogurt. The difference between regular and Greek yogurt is that with Greek yogurt, the finished yogurt is strained for a few hours to remove a good portion of the whey, making thicker Greek yogurt. I typically strain off 1 quart + 1 pint (6 cups) of whey when I make yogurt. My recipe is in the Master Recipe Thread over on the recipe board - miscellaneous subboard.

Today I made and froze 2 dump in a bag freezer recipes I found so my son can pop them in the IP if he gets home before I do. One was for herbed buttermilk chicken and the other for honey bourbon chicken, I haven't made either of them before so I only bought enough for one dinner of each-hoping they are good and if so I will double it next time and have them ready to go in the freezer.
In the oven I also made 72 Alton Brown meatballs so we have dinner tonight plus leftovers, and I froze the other ones so we can pop them out for dinner this month. I am trying to get prepped so I have things done and I think I have a solid 2 weeks of meals ready to go for the start of school!

Today's menu is popcorn and boiled peanuts for lunch. The popcorn was good, but I think I could cut back the amount of oil in the recipe I used. Can't wait to try the boiled peanuts later. I'm also going to have rice pudding, since DH and DD only want smooth pudding Their loss Tonight I'm going to do some frozen chicken thighs with TJ's green curry sauce over rice. My goal is to use the Instant Pot for dinner every night this week. I am happy to say that I haven't used the oven more than once or twice since early May. I'm also going to get rid of my crockpot this week. I'm working on this week's menu now. I definitely want to try dried beans-haven't done that yet.

It inspired me And, brought me happy thoughts of my first college roommate who has always loved Guinness. I laughed my arse off last winter when they were snowed in, and she posted a transcript of this conversation at their home: Rommate's DH and kids: We have no food in this house. What are we going to do? Roommate: We have celery and Guinness. What's the problem? I love her! I did use that popcorn recipe. Will definitely be using less oil next time. Of course, DH thought it was good, but he's a butter and all-things-bad-for-you hound. As much as I love coconut oil for some things, I'm not sold on it for popcorn. I'll probably be doing some experimenting for a while. I've tried the microwave/paper bag thing, but never been happy with the results. I do have a small, wimpy microwave though, so I'm sure that's a factor.

Tonight I tried the one pot pasta with frozen Italian meatballs. I had a small panic when I put the pasta and the sauce in the wrong order, so I just kept my fingers crossed. It worked great, and there was only a few noodles that didn't cook through.
Steps I used
I sautéed onions and garlic in olive oil Removed them and put in the meatballs Put in the sauce with the onions/garlic Put in the pasta Put in water and a bit of red wine High pressure for 5 minutes
Next time I'll just add a touch more water as the sauce really gets absorbed quickly

I finally tried corn in my IP tonight. We had a mish mash of left over butter chicken, left over pizza and fresh corn! I couldn't let my IP have a night off. I did the one minute technique and it was so good.
I asked DH for an air fryer and he asked me if I was never planning on using the stove or oven again. I just smiled. Not if I can get out of it!

Finally used my IP! I made ravioli with meat sauce and it was so simple and easy.
I browned a pound of ground beef on sauté.
I added 1 jar of Bertoli olive oil and garlic pasta sauce to IP.
Then added 1/2 bag of frozen spinach and mozzarella ravioli (from Costco so it was a 3+ lb bag) and enough water to just cover.
Cooked on high pressure 3 minutes. Quick release, then stirred in 1 cup thawed green peas and some Parmesan.
Quick, easy and yummy. Not exactly "cooking" since I just added the ingredients to the pot, but not bad for my first run!

I made steel cut oatmeal in the IP this morning using this recipe. I followed the first part of the recipe for the actual oatmeal, then when it was done I added frozen organic blueberries, put the lid back on and let it sit for 10 minutes to defrost and thicken. It was very good and DH liked it too. I put the leftovers into containers and into the freezer to test how well they reheat from frozen. DH often eats the frozen steel cut oatmeal from TJs for breakfast, so I'm hoping this can replace it. I have yogurt going in the IP now, using Elaine's instructions. This is a first for me. It's kind of silly how excited I am that I'm making yogurt from scratch. You MUST let us know how it worked for you. I made a gallon's worth of milk batch yesterday. We haven't tried the yogurt I made on Friday yet. I picked up one of the jars in the refrigerator today and shook it around and it seems soupy. I don't think I let it strain enough so it didn't get thick? elaine - how long do you let your yogurt strain for it to get to greek yogurt/thick consistency? I think I strained mine for maybe an hour?
