Well, ladies, my 20 year old crock pot (it was a wedding gift) finally bit the dust last week, and Amazon delivered an Instant Pot today. I already own an electric pressure cooker, but it's enormous (8 qt) and takes up way too much space, so I'm planning to move it to the garage and have the Instant Pot to take the place of two appliances. Yes? I'll keep the big pressure cooker in case I ever need to feed a crowd, I guess, but the 6 qt size is plenty for our family of four.
Pressure cooker "lasagna" and shredded pork tacos on the menu this week, and I'm also going to do baked potatoes in the IP to go with our grilled steaks tonight. I'm intrigued by the idea of cheesecake and some of the other things you guys are talking about!

I am doing two pork tenderloins tonight. They smell amazing. I marinated them with my homemade sauce I use. Can't wait to eat. How long are you cooking them? (NPR? QR?) I wanted to make them this weekend, but the supermarket only had pre seasoned, and I like to do my own. I had such a taste for it too! I cooked from half frozen for 35 minutes NPR for 10. Tender but a bit overdone. I will do 25 minutes next time.

Whoo hoo, success! I finally tried a one pot pasta meal and it worked! I've been nervous about pasta since my failed stroganoff attempt, but this one turned out just fine. A little more al dente than we like, but that's an easy fix. I had frozen meatballs, about 12 oz penne pasta, 25 oz jarred sauce, and a jar of water. I layered it in that order, poured the water around the sides, and didn't stir. Cooked on manual, high pressure for 6 mins, then quick release. Another minute and it would have been perfect. Took about 35 mins from start to sit down to eat. Have I said how much I'm loving my Instant Pot??

If you are batch cooking, this cuts the dicing/chopping time to 1/10th the time or less. Now, this is a luxury item, unlike the IP, which is a necessity. If you are talking about the silicone lids that you just slap on, there are a ton of different sellers of them on Amazon.

Can any share an online source directive yogurt strainer like Elaine uses? I checked 4 of our local Asian stores, including one large chain one and no one had a strainer. TIA I can also buy them at my H-mart and mail them to you.

The way the silicone lids work is that they are at least an inch bigger than the thing you are covering - you need extra hangover so that you can form some suction. I bought a 4 piece set and use them mostly as microwave safe lids for heating things in the microwave. If if you don't want extra lid all around the pot, go with something like This or This.

I don't know what I'm doing wrong, but I can't see the magic chopper, even the second link brings me right back to this page.
DH wants me to pressure cook chicken then fry it quickly for a crispy fried chicken (battered, of course). Has anyone tried something like this? We made fried chicken the other night and by the time the thickest part came up to temp, the coating was almost black. It was a KFC copycat recipe and I couldn't even taste the 11 herbs and spices that we put on it because of the browning.

The recipe I follow for fried chicken has me heat the oil to 350 before adding the chicken and then once the chicken is added (which naturally lowers the temp) keeping the temp between 300 and 325. If you are frying boneless breasts, pounding them might work too.

I'm off to watch the videos on this amazing chopper. LOL! I love the cinnamon color! I have a cobalt blue KA stand mixer that we got as a wedding gift 18 years ago and it is still running strong, so I went with the matching cobalt for the food processor. Using the dicing kit is a little tricky at first, and the instructions stink, so don't hesitate to ask if you have questions. It takes me longer to get the food processor out and set it up than it does to chop a hill of veggies in perfectly even chunks with that thing.
