I made chicken and dumplings earlier today, I have banana bread in there right now and later for dinner I will make chicken and stick of butter rice in the IP.

So what did everyone make first in the IP? I can make mac & cheese - have everything for that. Rice pudding sounds yummy. I was thinking of making a few things for later in the week. Any pork tenderloin success stories? Minus BBQ - been thru a gallon of Baby Ray's this week so looking for something different. Rice pudding is amazingly simple - just be sure to use arborio rice. It is also the rice used in risotto, which is another very easy dish in the IP. Tenderloin is a little tricky, so I might not start with it. The IP does much better with fattier cuts, and tenderloin is very lean, so it is easy to overcook it. You could try making carnitas (Mexican pulled pork) with a fatty roast cut or pork chops. Beef and broccoli is an easy first dish - there are a couple of good recipes out there. A few people have started with a one-pot pasta, sauce and meatballs or sausage meal.
I have an easy hamburger stroganoff one-pot recipe - it is on the master recipe thread on the recipe board.

Elaine, that Kitchen Aid with the dicer looks soooooooooo tempting, but I just bought the wildly expensive Breville food processor a few months ago. It is fantastic, but, boohoo, it does not dice. Just looking at that video makes my "oh I want this" mouth start to water, but I can't justify it after the huge Breville expenditure. But it certainly is a beautiful thing. Ooooh! Elise, I do love all those pretty Breville appliances out there now. I am sure that your new food processor will work like a champ for many years to come. You can always supplement it with this. It isn't as fast and easy as the KitchenAid dicer, but is still easier to use to get uniform pieces than a knife. I love my vidalia onion chopper. I don't cut up onions very often (my eyes can't take it, and I've tried all the tricks in the book) but I use it for potatoes, zucchini, etc. Anything firm that needs to be diced.

Damn you people! Bought the Kitchen Aid thingy yesterday. Total impulse buy, but my vegan daughter was watching the video over my shoulder with me and kept whispering in my ear "buy it. buy it. just buy it." (little devil) I do actually think we'll get tons of use out of it. The dicing was pretty darn magical, especially that potato -- dang!
In other news, we used our Instant Pot like crazy yesterday. Nothing special, but prepped big batches of brown basmati rice, quinoa, and black beans for the week. Today I'm going to do a batch of hard boiled eggs. I'm finding I'm using it more for things like that because it's so foolproof. I would like to branch out more and try some actual recipes though.

So why did I have to go to page 3 to find this thread?? I've been out of town for five days visiting my parents. (yes I took my IP). I got back late this afternoon. Called dh to tell him I was home and I said "long drive...and I am not cooking dinner." He said "no of course not" [the only safe answer he could have given ] and said he'd cooked pasta the other day and would open a jar of sauce or something. So, I'm starving, looked in the refrigerator and saw one sausage, the already-cooked kind like in the packages from Costco. I saw a red pepper, and one zucchini, and a can of Italian spiced diced tomatoes. Before I could even stop myself I cut up the pepper, zucchini, and sausage into big chunks, dumped in the can of tomatoes, set the IP for 1 minute then did QR. Dumped some of the already-cooked pasta in there to warm up, done. My dh got home, looked at the pot sitting there and said "you weren't going to cook dinner!" hahaha I said "I didn't! One minute of cutting a few vegetables and one minute of cooking time does not equal 'cooking'." He ate a big bowl of it and said it was delicious. lololol SaveSave

Yesterday, I made dh his first air fryer grilled cheese sandwich. You would have thought I fed him filet mignon!
Today I made boiled peanuts in the IP - yum!
And then for dinner tonight, I used thin cut beef, diced onion, diced red and green peppers and a package of seasonings by Passage Foods to make Korean Beef/Bulgogi in my IP. I served it over rice and it was so yummy -not to mention easy.

@ilovecookies did you wrap foil all around the bottom insert of the springform pan? I haven't heard this tip. Removing the cheesecake from the bottom is the toughest part of IP cheesecake cooking! I did. The cheesecake came off the bottom easily. For the second cheescake we tried, the recipe said to line the bottom of the pan with parchment paper. That worked, too. I think I like the parchment paper better than having to use cooking spray. My pan isn't actually springform-it's a Fat Daddio 7" cheesecake pan. It seems like the foil or parchment paper should work in a springform pan, though. Save

Well, I broke down and bought another inner pot. I am using the IP so much, I need to be able to pop one out and another one in without waiting for cool down, washing, etc. It arrives tomorrow. I'm so excited about it!

What can I do with this besides shredding for bbq? The only way I've ever cooked a pork roast like this is to shred. We'll have bbq of there are no other possibilities but just thought I'd ask. Yes I've googled but since I am not a cook I need specific recommendations from people who have followed a particular recipe. Lol
