I made another batch of quinoa last night. Then I put about a 1/2 cup in a frying pan and toasted it in a little olive oil. Once it was crispy and toasted, I used it on my meatless big dinner salad for a little crunch and protein.
I also put a bag of black beans into a bowl of water to soak overnight. I'm not sure what I will be making with the black beans. Maybe a cold salad with corn and red peppers. I plan to make up a couple of freezer bags of beans to put away until later. No more canned beans for me!

I put my sausage in and added water to cover. Ended up taking 5 cups. I started it, knowing it would probably take a lot longer to come to pressure. It started counting down but hadn't come up to pressure yet. I started it over but what would cause this? There's plenty of liquid and I didn't brown the sausages first so there's nothing burned to the bottom. When this happened to me it was because DD had made rice in it, and only rinsed the lid, so the valve was sticky. I gave it a quick scrub and it came to pressure almost immediately.

We had the Creamy Tuscan Garlic Chicken and it was awesome. I mixed in bow tie pasta (cooked separately).
I do love this pot.

I simply love how easy baked potatoes are in the IP! I actually layered two sweet potatoes on bottom and then 3 russets on top. High pressure for 15 minutes (heating oven to 450 while potatoes cooked) and then 15 minutes in the oven to crisp up the skins. The sweet potatoes were falling apart tender! I also grilled steaks, sautéed mushrooms in a cast iron skillet (I've switched to using cast iron for almost everything I do cook on the stove), and made a Caesar salad. All of my dh's favorite foods. I have a long day today ending with a doctor's appointment at Walter Reed at 3 pm, so once I walk out the door at 9 am, I won't be back until 6:30ish, so I'm not cooking today.

So my carnitas are on hold till maybe tomorrow because I cut open my pork roast and it was bad!!! I bought it last week and it said "sell by Sept 12". Before I went out of town I even called the meat department and asked if that meant it didn't need to be frozen before the 12th. He said yes, it was fine to keep it in the refrigerator because it was in one of those thick plastic wrappings. omg. ugh ugh. {gag} I took it back (wrapped up in four grocery bags, with original wrapping still on it because all I'd done was slit it open with a knife) and plopped it down on the counter. She had to open it to scan the bar code. hehehehe Although of course it wasn't her fault, she doesn't work in the meat department. She said she was going to take it directly back to the meat guys and let them smell it. I'm disappointed because I even went to the store and bought ingredients including oranges and limes. And I had everything lined up on the counter, although fortunately not measured out. grrr.. I made them give me a rain check for the sale price and I suggested she could add a few pounds to the weight limit for my trouble. She did. (the roast was 8 pounds and she wrote the rain check for up to 10 pounds.) So I'm done with that store, since this is not the first time I've had to return meat or fish there. ugh. UGH! I'll use my rain check at another store that so far hasn't given me any trouble. So dinner will be the mac and cheese that I made on a whim today (lol at me cooking anything "on a whim", hehe) and burgers I guess. grrrrrrrrr SaveSave

monklady123 I'm sorry to hear that bad meat spoiled your dinner plans. We have a work potluck today, so I whipped up some unstuffed cabbage rolls. It was so easy and quick! I blended my own recipe together and they are pretty tasty. Here's my recipe and I'll also add it to the recipe board. I eyeball spices so I didn't give specific amounts Ingredients 1 lb ground beef small head of cabbage 1 tin of tomato sauce 1tin diced tomatoes drained(or not) 2 cups beef broth 3/4 cup rice small onion garlic splash worchestershire sauce oregano marjoram salt and pepper Steps brown the beef add onions and garlic continue to saute add remaining ingredients set to manual hp for 10 minutes and natural release for 10

I'm doing a huge shredded pork roast tonight to make tacos, and will freeze the leftovers for future use. I don't do anything fancy with my pork - I cut the roast into quarters or sixths and brown it, and then cook at high pressure with a bottle of salsa verde and a tiny can of chipotle peppers mixed in. Delicious and easy! Sometimes I also slice up an onion and add that. Get some fresh flour and corn tortillas from the local panaderia and you're all set.
I found a recipe for lamb curry and plan to try that tomorrow night and have it for lunch leftovers through the week. I may also do some bone-in chicken breasts for salads if DH doesn't have time to do them on the Traeger.

I finally unpacked my Kitchen Aid food processor. This thing (not to mention the accessories) is HUGE! It makes my old food processor and Vitamix look like minis. It's going to become a weekend project trying to make a home for it! (and the mini bowl came out of the box broken, luckily it's not needed for chopping which I have been anxiously waiting to do!)

I'm so sorry that the small bowl arrived broken. Is QVC sending another one out? For me, the food processor itself isn't any bigger than my last one, but the two containers with the blades and with the chopper set are big. The good thing is that those are easily stored in a lower cupboard for me and no parts get lost. I still come across blades from an old Cuisinart processor because the blades were loose. I can't wait to hear about your first chopping escapade!

I purchased a nice, big package of stew meat yesterday so I'm looking for a recipe for dinner tonight. Not necessarily stew...maybe beef stroganoff or something else. Sometimes I spend so much time browsing the web for recipes I run out of time to cook I also might try that buttermilk chicken others have posted in the past. That sounds delicious.

I just used it for dicing apples and some leftover mini potatoes and they are currently roasting with some brussel sprouts in the oven! Everything was done and ready to go into the oven when it hit temp! WooHoo!

I used the dicing kit to chop tomatoes, cucumbers and onions to make a salad, then I shredded lettuce for DH's salad, grated cheese and grated zucchini in as long as I could get in the processor to make sorta noodles out of them. It was awesome! Here's what I did to her (her name is Miss Scarlet): I don't know why the pic is sideways, the source pic isn't. Then my IP and blender were jealous, so they got into the game too! : I made a cheesecake in Mrs. Potts today and it came out different than the last one I made. I used This Old Gals recipe that uses a 1/2 t of flour and it puffed up out of the pan. It was all over the foil. When it cooled off some, it went back down into the pan, but it still looks weird. I tasted what was stuck to the foil and it tastes OK, it's just a different texture. I'm only planning on cooling it for a few hours in the fridge 'cause I want it for dinner. I'm wondering if that will affect the texture too.

I finally got around to making the Hamburger Stroganoff and it was a winner. So tasty and creamy! I usually wouldn't make stragnoff because it's time consuming and makes a mess of several pots and pans. I love being one and done with the IP!! I'm lazy in the kitchen.

A little late to the party on the what else to do with pork discussion... But wanted to put in a plug for the white wine braised pork recipe from the big pressure cooker cookbook. I used fresh baby Bella's because I couldn't find any dried mushrooms and a pork tenderloin and it was amazing. Even DH who isn't much into sauces or other " fancy" stuff like that liked it enough to comment. Served it with some parmasean roasted red potatoes. Going to try using chicken next time and think it will also be delicious.

I have some cookbooks on my Christmas list. I want great food fast and the great big pressure cooker book. I always have trouble coming up with ideas for myself, but this year may be all about the kitchen lol

I've been using my PC to cook beans, mostly. Today I cooked a pound of chickpeas, unsoaked, in 38 minutes. I was able to make hummus in under an hour.
I made black beans with some green Chili's and salsa and froze them in 1/2 cup portions. I use them when I make nachos or burritos.

I,m going to do a short rib roast tonight. I have found a recipe for short ribs but not for the roast. It's about 4 pounds. How long would you cook? I'm thinking 75 minutes?

I have a Chuck roast cooking in beer, beef broth, and spices at the moment. When it's done, I will shred it and then put it in the fridge until tomorrow when I will make shredded beef enchiladas with it. I made them once before, all on the same day and they were delicious. I just don't have time today!

The chipotle shredded pork I made last night was soooooo good! Made the best tacos. Repurposing it, sort of, for burritos on Tuesday.
Nothing in the IP tonight because DH is grilling burgers, but tomorrow night there will be tuscan chicken stew. Fingers crossed!

Nailed it!! Lol beans came out perfectly creamy and delish! I have to make 2 batches working on the second now.
I made the beans by putting a smoked pork hock in the pot with a half gallon of water plus a tablespoon of homemade creole seasoning. 30 minutes later had flavorful "water" to cook the beans.
So using the smoked pork water, another tablespoon of creole seasoning plus a teaspoon of sea salt and a pound of dry red kidney beans + 35 more minutes (I took out the hock to let it cool). Beans were done.
I dumped them into a crockpot, sautéed onions, celery, orange pepper, dumped that in..
Pulled the smoked ham off the hock, put that in...
Sautéed andouille sausage put that in...
And now I'm thinking I'll put some creole seasoned chicken thighs cut up into sauté and dump.
Hubby says no chicken- that it tastes so good as it is!
I did it this way testing out a made up recipe, so that I can have it warming in the crockpot all day while I'm at work, people are coming for dinner 2 hours after I get home from work.
All I will have to do is make rice.
I'm going to a local restaurant before I come home to pick up some precooked Cajun bbq shrimp--either for an appetizer or to garnish their bowls of red beans and rice+
